Here is a tasty homemade salsa to accompany your crispy tortilla chips. Many salsa recipes call for canned tomatoes and chilies (i.e., already cooked). I find that using fresh ingredients, and then cooking the salsa briefly, yields the best flavor. It sweetens the tomatoes and brings out their flavor. (Note, canned tomatoes have also been semi-cooked) The other purpose cooking it serves is to bring the mixture up to the required temperature for canning.
When I was pregnant with my son, I was completely addicted to Chili’s salsa and chips. I wanted to eat there ALL the time, and even when I wasn’t eating there I was trying to convince my husband to stop there on his way home to pick up some take out lol. He was always less than pleased. I still love their salsa, but since it’s not really cost effective to buy it, or go out to eat all the time, I figured that I would just find a way to make it at home 🙂
Now to the topic at hand – I’ve had the same concerns as you, especially since my dear husband is Mexican! We loved the canned salsa I made for the first week or two, then it was too vinegary, so now I use it for stuff like zucchini squash to use it up. Haven’t tried it again because, well we don’t have enough tomatoes yet and am leery about the vinegar and how to make it spicy enough. I never thought to skimp on the onions to compensate!!!
The key to this recipe is to char the tomatoes and peppers on the stovetop. I tried to do it in the oven once and roast the tomatoes & peppers, bad move. It will take you about 20 minutes, but sooooooo worth the wait. You’ll need to rotate the veggies from time to time, so all the sides are pretty even. Here is what the vegetables will look like once they are done:
In theory, yes – BUT – there’s no way to test the finished product and confirm that it will heat evenly to ensure safe processing. You’re adding chunky,starchy bits that are likely to make the salsa thicker. Thick product slows down heat transfer. This may mean that the processing time needs to be increased to make sure that it heats all the way through, or it could push it to the point where it would not be recommended for home pressure canning, like pumpkin butter. (It’s safe to can pumpkin chunks, but it is not safe to can pumpkin butter.)
However, if you recently canned them, you’re okay to keep it – you don’t have to throw it away! Being improperly canned just means they can’t be stored at room temp for months and months. Just move the cans to a refrigerator for storage for a month or two. For longer storage, transfer the salsa to freezer-safe containers (leaving room to expand) and freeze. Salsa freezes well! If you have more ingredients, definitely try again using this recipe and the updates I now use in preparation if you have a food processor. 🙂
Made my second batch today. First batch was a just over a week ago and yielded 8 jars. It was quickly apparent this was not enough!! lol Family is raving about this recipe. I didn’t add the sugar either time, don’t miss it. I used the jalepenos with all the seeds and membranes the first time. Quite spicy but not unbearable. This time around, I used the seeds and membranes from 3 of 5 of the jalepenos (per batch; I doubled the recipe this time, hoping to keep some in the house for more than a couple of weeks.) It’s perfect to my taste.. probably a medium to hot level compared to store bought. My family doesn’t like chunky salsa so I threw the tomatoes in the food processor for a couple of pulses, and used the food processor for the peppers, and onions. SUCH a great tasting recipe. All I hear are complaints that we keep running out of nacho chips 😉 Thanks for sharing!!
Add the chile mixture to a blender and puree. Remove the tomato/onion mixture from the roasting pan and carefully add it to the blender, (it will be hot). Blend until smooth (you may need to work in 2 batches). Once everything is pureed, pour the mixture back into the pot over low heat adding a little water if the salsa is too thick. Stir in the sugar and lime juice and season with salt and pepper, to taste. Transfer to a large serving bowl and serve.
Mexican oregano is a dried herb used in Mexican cuisine. It’s similar in appearance to regular, Mediterranean oregano but is, despite its name, a cousin of lemon verbena rather than a member of the origanum family to which oregano belongs. It shares some of oregano’s unique and pungent earthy flavors and aromas but more subtly so with an added grassy kick of citrus and licorice. Mexican oregano is readily and cheaply available online and adds a unique element to Mexican dishes. If you can’t get Mexican oregano, you can substitute a pinch of marjoram or even regular oregano, just use a little less than the recipe dictates.
Seasoning mixes can be prepared from scratch or purchased pre-mixed. Ingredients that are frequently used in the mixes include garlic, chili powder, salt, pepper, sugar and cilantro. Vegetables such as peppers or onions can be dehydrated and included in seasoning mixes or added fresh into the recipe. Many cooks taste the salsa as they are preparing it, adding spices until the desired flavor is reached. Several drops of hot pepper sauce can be added to most recipes to create a spicy salsa.
I have a beloved salsa recipe I have used for years. I canned a ton of it last year and thought I would try your recipe for some this year. I have a daughter who does not love cumin. Hi Holly – I’m honestly not sure in regards to food safety. From what I understand, the ingredients that can be altered without affecting food safety are: leaving out the tomato paste (not sure about the tomato sauce), altering the spices like cumin and salt and cilantro, etc., and modifying the amount of jalapenos. I don’t know the pH of radishes and how the would sub in for green peppers – and of course the amount of tomatoes and vinegar (for the main acidity) need to stay the same.
Given this is our first year gardening, in pots no less, our plants have not produced standard sized fruits and I’m concerned, they may not continue producing. We’ve been using the tomatoes as they’ve come in, so we’ve not been bombarded by any crops yet, though I know, it’s still early. Maybe if we move here in the next week or so, I may just put the plants right into the ground and see how they do.

What’s interesting though is that the largest manufacturer of canning jars and lids (they make Ball, Bernardin, Kerr and Golden Harvest products) recently changed their guidelines to now specifically instruct consumers NOT to boil/sterilize the lids, otherwise a poor seal will result. Instead they recommend extending the processing time to 10 minutes in an effort to kill any bacteria that might be present in the jars.

Absolutely wonderful! Just finished making IT! I made it with all fresh ingredients and added some extra little skinny cucumbers! For extra flavor a bit of Heinz Ketchup and Sriracha sauce! Sometime late September I made a batch of salsa using this recipe. It WAS the best salsa I’ve ever had. Like you said just the right balance of flavors and not too spicy. I have a jar to a friend and her guests loved it too. I don’t have much left so will make sure I make more next. The tomatoes I used were from my garden – two varieties plus some Roma tomatoes. I tried this and loved it! I used one banana pepper, one large jalepinio (sp) and topped the rest of the cup with yellow peppers. I don’t care for green peppers so I just used one cup of them and the second cup of a mix of yellow and orange. I love garlic, so a added 4 cloves total. I used fresh cilantro and oragano. I chopped my tomatoes and tried to remove seeds and extra juice as I went along. It turned out fantastic. This recipe is a keeper. Thank you so much for sharing it!! 5 stars!!
