I am canning salsa my plan is to add baby carrots just prior to the water bath. My recipe (BEST EVER) calls for sweet baby carrots but I don’t wana cook them in the salsa I want them as fresh as possible. I hope it works, I’ve been canning for 30 years but have never attempted my salsa… I’ll keep you posted. I just maybe on to something. Haha! I can totally relate to that. This last Summer I canned up a STORM. It was my first time canning and even though I was excited about all of the jars full of different goodies, I was kind of nervous about actually eating and of it! So, in a streak of paranoia, I had my husband consult a colleague of his who is a pathologist. I figured since he is an expert on germs he ought to know about the safety of eating canned goods. The pathologist said that as long as the lid hasn’t popped it’s completely safe and he wouldn’t hesitate to eat it or feed it to his own kids. That made me feel a whole lot better :) We’ve been enjoying all the jams, relishes, pickles, apple sauce, and salsas since and…we’re still breathing! Go for it, Tori!
It depends! On a bright summer day, nothing quite beats a freshly made pico de gallo salsa using ripe tomatoes, freshly picked chili peppers and a generous squeeze of lime. In places like Denmark, though, where the tomato season is notoriously about seven minutes long, I would show no hesitation in using a trusted brand of canned tomatoes for my salsas and whip them up using a plethora of dried chilies.
Love this recipe and the great visuals, I made it as stated above. It is delicious, my Dad loves it too, we can together and we can’t seem to stop eating this salsa. I tend to like it spicier so would add more jalapenos to part of the recipe next time, I might experiment with part bottled lemon juice (safer for canning as pH is consistent) and part vinegar. The flavors are wonderful. Thank you for the great recipe.
This salsa is amazing! I made it last year but didn’t leave a comment, probably because I was too busy eating all the salsa. Just finished a batch today and thought I would add my two cents that I used about 18 pounds of roma tomatoes to get the 10 cups for this recipe. Perfect salsa every single time! I used 5 jalapenos and it has just a hint of heat, which is perfect for me, a self-proclaimed spice wimp. Thanks for another fool-proof recipe, Mel!
I have now made 61!jars of salsa and not sure it will get us through til next summers tomatoes! For the past month my family is eating 2 jars a week, and would eat it daily if I didn’t ration it! I got some extra tomatoes this week that I was going to just quarter and can, but made the last 13 jars instead since they love it so much! I usually share my canning with friends but they won’t get much of this!I highly recommend this recipe. We like the addition of bell peppers!
I added a tea spoon of fine ground hot pepper. now thats the slight hot I like and no tomato paste. I like it wet …Great recipe. the first time I ever made salsa and I am glad I found the perfect recipe.. on top of it all. its just like a recipe of a so called semi friend. that had his own recipe I liked and he wouldnt give it up. well ..he can bite this. now!! I got it. if not better ..ha ha !! you and your grand mother knew your stuff… Thanks !!
