I did a lot of research about the lemon juice, and the reason for bottled is because it’s consistently about 5% acidity- fresh isn’t consistent. I’ve used organic and I’m OK with it, but I’ve not read anything OFFICIAL about it. I think if it’s consistent, it should be OK, and it’s certainly better without the preservatives. I know there are canners who use fresh lemon juice, though, and don’t think it’s a problem- but it’s just not worth it to me to go against the recommendations, though. 🙂
Love this recipe and the great visuals, I made it as stated above. It is delicious, my Dad loves it too, we can together and we can’t seem to stop eating this salsa. I tend to like it spicier so would add more jalapenos to part of the recipe next time, I might experiment with part bottled lemon juice (safer for canning as pH is consistent) and part vinegar. The flavors are wonderful. Thank you for the great recipe.
This is pretty much my exact recipe, only I stopped measuring a long time ago and I’ve never tried using canned tomatoes along with the fresh. Fresh salsa is definitely the way to go. I can’t even eat canned salsa anymore. One thing I do sometimes to add depth is to roast the tomato, garlic, and jalapeno (just throw it all on a baking sheet and let it go for about 20 minutes at 400F, turning once if I’m not feeling too lazy). This in combo with the fresh cilantro and lime juice gets rave reviews. I bet using canned tomatoes would add a similar depth!
Hey Beth – sorry about that. The notes somehow went missing. I’ll add them again, but here’s a great article about canning salt. Basically, you can sub in kosher salt or even table salt (although use a bit less since the granules of table salt are finer)…it’s best to try to use a kosher salt without any additives (canning or pickling salt is pure salt without any anti-caking agents) if possible.
This year I wanted to can salsa again, and I’d just had a little bit of that Mexican salsa (served with a quesadilla at a local organic restaurant, if you’re curious) and it reminded me that that was what I wanted to go for. So, I set into my kitchen with 54 lbs. of tomatoes and decided to use some of them to make a small batch of salsa. If it was just “okay” I’d have a few pints to eat up through the year and that would be it. If it was great, I’d make more batches. It’s pretty safe to say I’ll be making more. 🙂
For canning whole tomatoes, I like those that are firm, but small and round. They hold up better during canning if they are not overripe. Pearly Pink, Stupice, and Glacier are some of my favorites. Given this is our first year gardening, in pots no less, our plants have not produced standard sized fruits and I’m concerned, they may not continue producing. We’ve been using the tomatoes as they’ve come in, so we’ve not been bombarded by any crops yet, though I know, it’s still early. Maybe if we move here in the next week or so, I may just put the plants right into the ground and see how they do.
Hi, I’m gad to see this blog still up and running. I have been canning salsa for years with an old-school hand me down recipe (which we love) but my recipe instructs to put 1 tbsp. lime juice per jar (quart)… not added to salsa mixture. I have tomatoes ‘draining’ tonight and am going to try the apple cider vinegar this time around. I have not read this recipe before and an curious the taste comparison… I have read that it is safe for water bathing, I’m thinking the time would remain the same.
Now to the topic at hand – I’ve had the same concerns as you, especially since my dear husband is Mexican! We loved the canned salsa I made for the first week or two, then it was too vinegary, so now I use it for stuff like zucchini squash to use it up. Haven’t tried it again because, well we don’t have enough tomatoes yet and am leery about the vinegar and how to make it spicy enough. I never thought to skimp on the onions to compensate!!!
Salsa Roja, as stated above is a red salsa in which the ingredients tomatoes, hot peppers, white onions and all have been cooked and blended as part of the preparation. This creates an intensely flavorful, relatively runny salsa perfect for slathering on tacos or using as a dip, but also suitable for many other uses. This versatility has made Salsa Roja a staple at many Mexican restaurants as a table-side dipping sauce, often made fresh in house.
Place tomatillos in a medium stock pot and cover with water. Bring to a boil and simmer to cook, about 10-15 minutes. While the tomatillos are simmering, pan sear the chiles whole in a dry pan until they become aromatic, about 10-15 minutes. Using a slotted spoon, remove the tomatillos from the pot of boiling water. Add the toasted chile peppers to the pot of hot water and steep until softened, about 10-15 minutes.
OMG! This IS the best salsa!!! I used Romas to make a tomato sauce for the recipe. I used regular fresh tomatoes from the garden and skinned, chopped, and squeezed juice from them. I followed the recipe exactly except for no sugar. I think the 100% apple cider vinegar is important (not apple cider flavored vinegar). Thanks so much for sharing your excellent salsa recipe.
Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 to 15 minutes.
I just finish making 18 pints of salsa, using this recipe with some modifications! I added 2 cups of finely dice red and green bell peppers, increased the vinegar to 3/4 cup and came out with a pH of 4.1. I let it set for about 30 minutes after mixing to mix the flavors and then I brought to a boil and only simmered for about 5 minutes, as I like less soggy salsa!
The only salsa recepie you’ll ever need, so stop looking, this is it!! It has the perfect blend of everything, I have an abundance of tomatoes this year and I am on my 4th batch, I have followed the recepie exact, except for the last batch I made and that was because I wanted a bit more heat. Hi there 🙂 Precise serving sizes are so hard to quantify, since it all depends on how much each person eats lol. But the recipe makes approximately 4 cups, so I think that would be enough for 9 people… although, to be on the safe side, you could always double the recipe. Leftovers are good for a week or two in the refrigerator 🙂 Hope you love it!
Delicious!!! As far a second knowing how many tomatoes to use, you mentioned somewhere that it was three sheet pans of halved tomatoes. Using this information, I collected my garden tomatoes on my counter by placing them on my baking sheet. When I had my baking sheet full plus another half, I knew I had enough tomatoes (or at least that I would be close once I drained them). Turned out great!! Even my daughter who can tell handle spicy foods LOVES this salsa!
This was incredible to make. I’m so thankful I found this recipe. I did double it as I had enough tomatoes from the garden to do so. I even let them sit overnight in the fridge in a container to help them lose a bit more water content. I also used different peppers. I did half green bell peppers and half poblano. I didn’t have enough sweet bell peppers yet in my garden. I also didn’t have any jalapeños so I subbed in the heatless habaneros I grew just for the purpose of trying them in salsa. They were perfect. All the flavor of the habanero but none of the burn. Bought the seeds from Bakers Creek for those wondering about them. I’ve been asked by my family to forgo all of the chili sauce and stewed tomatoes I also make from my garden bounty and to just make the salsa. Thank you again for such a wonderful recipe. I have been going about it so wrong for years.
Roast the poblano peppers right on the flames at the top of the stove. When they gets black and the skin blisters, wrap them in a moist kitchen towel to cool, then hold them under running water and peel the skin off. Chop them into fine pieces after seeding and deveining. Add the poblano peppers, as well as the jalapeños and garlic, to the onions and tomatillos/tomatoes.
Fresh cilantro would decrease the acidity, Rose, so I’d be careful – maybe 1/4 c. but then decrease the onions or peppers by a couple tablespoons or increase the vinegar by a tablespoon? I like to play it safe – I know many people can salsa that’s full of fresh ingredients, but food is just not worth playing with for me, so I try to go by the book. Personally, if we want cilantro, we add it when we use it – it tastes fresher then, too. 🙂
I have been inundated with massive amounts of tomatoes this year! At one time I had 90 pounds of them on my porch… staring at me. I made your salsa yesterday. A bigger batch and a little more spices added, but it is great! I put up 10 pints and 6 half-pints. It at least made a dent in the buckets. Thank you for a great recipe. (Today there were 2 contractors that came by to give bids for some work we need done, they walked away with tomatoes!) I’m almost a neighbor- in Damascus, just southeast of Portland.
Before I was gifted so many tomatoes, I used to head to the farmer’s market this time of year and stock up on the uglies. The uglies are what most tomato farmers sell for dirt cheap- they are ugly, misshapen tomatoes that are perfect for salsa making. You’re going to need a lot of tomatoes, so skip the $3.99/lb heirlooms for this salsa. Grab a bucket of uglies and make salsa!

I just made this recipe and it is delicious. I used about 1/2 cup sliced jarred jalapenos for nachos instead of roasting the jalapenos and also used a can of fire roasted stewed tomatoes because it used less sugar. I used a regular 28 oz. can of tomatoes also. This is a winner. Tastes just like the salsa you get in restaurants. We loved it. I highly recommend this recipe as a Volunteer Field Editor for Taste of Home.
I did make it and it was delicious. I actually froze the tomatoes until I had time to use them. I washed them and froze them whole in gallon size freezer bags. When time to use, I defrosted tomatoes on counter top for about two hours, the skin came off easily and chopping the tomatoes up wasn’t a mess because it was still semi frozen. This method worked perfectly actually. Then I followed the instructions for this recipe. The salsa turned out perfect. Very tasty. I canned several for later enjoyment. I never respond to blogs, but feel this is one that needs a response. Made this salsa and have to admit this IS the best salsa ever. It was so good fresh and canned. I can’t get enough of it. Am going to make it again. I have shared this recipe already. My husband loves everything so hot, but I left out many of the seeds, so I could enjoy it. Told him he could add habenero’s, ghost peppers, carolina reapers or whatever to his. I am just going to enjoy and savor the flavor of this salsa. Thank you so much. No more store bought. (oh, I added yellow goathorn peppers in lieu of the green peppers and added 3 extra garlic cloves)… it was just great
I substituted some of the vinegar with lemon juice and it tasted wonderful! I also used sweet onions and red onions. I used half green and half yellow peppers. Do not use the insides of the jalapeños if you want it more on the mild side. I used store bought Roma tomatoes and it took more like 5 minutes but the skins did pull off pretty easy. I made a double batch and got 16 jars. It was a HIT with my family and they are asking for more plus my friends all want the recipe!

My husband and I made one batch lickety-split last evening between my building a house with Habitat for Humanity all day and Beauty and the Beast at the Oregon Shakespeare Festival at 8:00 pm! Luckily he was here to chop the onions, peppers, garlic because rather than 7 jalapeno peppers he said, “Let’s try one and add more when we eat it should we choose.” Smart Man, indeed! Our jalapenos, fresh from the garden, must be the very hot type as even with just one, there is still some kick to the salsa! Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!

Friends and family tease me about stressing out over botulism, but that is NOT a risk I am willing to take despite them telling me to “do it just like your grandma did, we loved her stuff” so I was very happy to come across your blog (way too many sites with recipes that are not approved). I had a huge crop of San Marzano tomatoes this year so I can’t wait to make your sauce and salsa (and my tried and true salsa for the fridge – but not to can ;).
Made this recipe today. Picked about two full plastic grocery bags of big boy tomatoes from garden which came out to almost exactly 10 cups (maybe 1/4 cup over) after peeling, crushing and draining. I used the traditional boil and ice bath since I hadn’t wanted to turn on oven since it was such a hot day. I altered the recipe only slightly. I ended up not using cilantro since after 3 days it went bad after picking it up from the grocery store. I did add about 2 or 3 Tbsp parsley flakes since I personally love parsley in almost everything I cook. Instead of garlic cloves I used three tsps chopped jar garlic which I always have on hand. I did add the sugar. I used 1 cup apple cider vinegar and ¼ cup lime juice. I did use the tomato paste as well. I used 5 large jalapenos and took the seeds and membranes out of half each. It gave it about almost MEDIUM HEAT if compared to store brands. Instead I used quart jars and somehow it came out to 7 quarts with about a pint left over I put in fridge to sample. I did the water bath as that is what I have always used. As soon as my father got home from work he took it out to try and my daughter was like mom hasn’t even tried it yet. We all tried it and absolutely loved the taste. Mom don’t eat salsa or spicy so she wasn’t included in the vote. Lol. 3 out of 3 loved it in my house. Bummed I had already promised my brother and my bfs mom a jar. Lol. I already know this salsa wont last through winter. Thank you so much for sharing this wonderful recipe. Saving for future years.
I would like to say thank you for posting this salsa recipe. This is the first time I have every comment on a recipe I have come across on the internet. I made a double batch of this salsa yesterday. Followed recipe exact. I tasted the salsa before canning. It yielded 17 pints. Probably could have made 18 if I wouldn’t have eaten any. It was delicious. All the fresh flavors blended together perfectly. My family was overly complimentary of the taste as well. My daughter said it was the best she has every tasted in her life. That is saying a lot since she is a big fan of Mexican food, starting with chips and salsa. My husband couldn’t stop praising me, which I loved! This morning for breakfast, he had to have an omelet with salsa. At this rate I will have to make another batch before the season is over. Again, thank you, it is truly the “Best Homemade Salsa”.
This recipe is a great starting point to develop your own Mexican salsa recipe. Adjust any or all of the ingredients to suit your tastes. Although this recipe calls for charring the chiles, you can also make it without charring them. Add more chiles for a spicier sauce or reduce the number for a milder version. Substituting jalapeño chiles for the serrano chiles will make a milder salsa too.
