Place tomatillos in a medium stock pot and cover with water. Bring to a boil and simmer to cook, about 10-15 minutes. While the tomatillos are simmering, pan sear the chiles whole in a dry pan until they become aromatic, about 10-15 minutes. Using a slotted spoon, remove the tomatillos from the pot of boiling water. Add the toasted chile peppers to the pot of hot water and steep until softened, about 10-15 minutes.


I am going to try this recipe today using roma tomatoes. I just wanted to add, most recipes call for de-seeding and squeezing out all tomato juice from the tomatoes. I have learned that you can cook down the juice and seeds, ( one year I had 2 quarts of tomato liquid …slowly cooked down to 1 half pint ) this way all my ingredients were fresh garden and not canned. The thickened tomato seed juice was so close to paste that it thickened the salsa I made. I just incorporated it into my tomatoes measurements. Trying that with your recipe. Ty
The one thing I learned when teaching myself to can salsa was that in order to use a water-bath canner to make salsa shelf stable, it’s important to use a recipe from a trusted source that uses USDA guidelines. This is because there are so many low-acid ingredients in salsa (peppers, onions, and garlic) that it creates a delicate balance between the acid (tomatoes and usually another ingredient like vinegar or lemon juice) and the low-acid ingredients.
Combine all ingredients except cumin, oregano, and cilantro in a large pot and bring to a boil, stirring frequently, then reduce heat and simmer for 10 minutes. Add spices and simmer for another 20 minutes, stirring occasionally. Ladle hot salsa into pint jars, leaving 1/2-inch headspace. Adjust lids and process in a boiling-water canner for 15 minutes at 0–1,000 feet elevation, 20 minutes at 1,001–6,000 feet, and 25 minutes above 6,000 feet.

Hi, I came across your recipe and am eager to try it, but have never done any canning before, so I dont have a canner. I’ve tried doing a little research, and am a little overwhelmed, so I thought I would ask the source. Is this recipe safe to can in a water bath method, just covering it with boiling water for the recommended time in a big pot? Forgive me if that is a stupid question! Thanks so much, I cant wait to try it!!


A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. Add the chopped peppers to your saucepan. Chop your onions into pieces, weigh them, pulse in the food processor, and add to your saucepan. Skin your tomatoes, cut into smaller pieces, weigh them, pulse in the food processor, and add to your saucepan.

It needs to be cooked ahead of time so that the flavors are blended and you can taste it and make sure it’s how you want before canning. With the big pot for canning, I have a quilted hot pad under them instead of a rack. I never bought a rack because the hot pads work just fine. You need something under the jars but it can be as simple as a kitchen towel (I have not broken a jar in 3 years! So it must be okay, lol). I have some posts on the water bath method that explain my equipment in more detail.

Can’t wait to try this! On another note, do you know how I can get your recipes to print without the ad in the middle? The ad used to show up but wouldn’t print. Now it’s printing and I can’t get rid of it. I’ve tried going to “ad options” but I believe that just changes the types of ads I see, not taking the ads away. It’s just annoying that a lot of the recipes are printing in 2 pages now because of it. Any direction you can give would be great. Thanks!
This is IT!! Made this last year, and all the jars are gone! My family LOVED it , and this time I am pinning (in case i lose it again!!) I followed the recipe almost to the letter, adding a little extra salt (we like salsa on the salty side) and omitting the cilantro (personal preference, I HATE it, kiddos and hubby can add fresh when it is on their plate)
Sometime late September I made a batch of salsa using this recipe. It WAS the best salsa I’ve ever had. Like you said just the right balance of flavors and not too spicy. I have a jar to a friend and her guests loved it too. I don’t have much left so will make sure I make more next. The tomatoes I used were from my garden – two varieties plus some Roma tomatoes. It’s the mix of tomatoes that helps make this recipe so good. Thanks to you for making it available.

I followed the instructions to a T and it turned out horrible — bland, almost orange (not red) in color, and not spicy at all (2 serranos added). It’s also watery to the point of being a soup! I’m going to have to try to save at least a little bit of it and add it to some salsa verde that (thank goodness) I had in the fridge already. :/ I guess no short cuts will ever beat the real deal.

I love tomato season and this year I made salsa.  Fire roasted salsa that I canned.  I used tomatoes and poblano peppers from the farm stand and roasted them on a hot grill until they were charred and blistered all over.  I love the flavor of grilled tomatoes and peppers.  Then you just peel off the skins, chop chop, add a bunch of good stuff to the pot and you’ve got fire roasted salsa.  It’s perfect for canning to enjoy year round.
Problem: Low Acid Foods – The trick to canning shelf-stable foods is the acidity. If you have the right amount of acidity, it creates an unpleasant environment for dangerous botulism bacteria to grow. When canning low acid foods such as green chiles, you need to either can them under pressure (using a pressure-canner), or if you use a simple water-bath canning process, add enough acidity to prevent bacteria from growing.

This was too spicy for me (not mild!) and very vinegar-y! I know the acidity is important, but tomatoes seem pretty acidic on their own, right? I’ll stick to my old recipe (which is time tested from my mother in law, but I’m not sure if it’s officially approved by a lab) but I do like your skin slip method. Took longer than 3 min for mine. And the less ripe store-bought Romas didn’t really slip off. Garden ones did, but they weren’t Romas.
We have adapted our salsa method from Well Preserved. What is special about their method is the straining of the tomatoes before packing them. This straining and sweating of the tomatoes is the same concept for pulling the moisture out of zucchini before cooking. By pulling the moisture out of the tomatoes, you allow the fruit to keep a more crisp texture when canned.
While I was visiting with my family in Mexico, my tía Minerva would prepare a small, fresh bowl of this salsa at least every other day. She would add all of the ingredients in a glass bowl and cook it quickly in the microwave! I will never forget my reaction when I saw her do this the first time! this is my 4th time to make this. it is such a hit I’ve been asked to make it several times. today i decided to try using my home canned tomatoes from last year to see if it worked. So much easier and may I say less time consuming than working with fresh tomatoes. It taste just as good if not better with my canned tomatoes. I used 4 quarts of qt. size tomatoes and it was perfect
Making this right this very second. Following exactly to start with..except am throwing in a couple of Thai peppers along with the 4 smallish jalapenos...which I may regret...them things are supposed to be killer hot. I will say, that it is taking significantly longer than the 10 minutes prep time for the water to simmer off (step 2), but I'm in no huge hurry....I have wine.
Water bath canning involves submerging the jars in boiling water for a set period of processing time. It is suitable for high acid foods. Pressure canning (not pressure cooking) involves processing the jars in a sealed pressure canner at elevated temperature and pressure. You must can all low acid foods. You can can high acid foods, but most people just water bath can them. Some folks prefer dealing with the steam over dealing with a big pot of boiling water, which is why I give both options for this recipe. It is heavy on tomatoes and also has added vinegar, which should keep the pH below 4.6.
The key to canning the freshest tomato salsa is doing so when the tomatoes are in peak season. Also be sure to find a canning recipe that is tried and true, because canning tomato salsa improperly can cause it to spoil. And peeling the tomatoes first is worth the effort. Canning tomato salsa is not the same as making it fresh to eat the same day. The skins will become tough and chewy once canned.
