A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. Add the chopped peppers to your saucepan. Chop your onions into pieces, weigh them, pulse in the food processor, and add to your saucepan. Skin your tomatoes, cut into smaller pieces, weigh them, pulse in the food processor, and add to your saucepan.
Below in a comment from early August it said to get the 10 cups it would be about 8-12 tomatoes. I used about 30 medium size roma type tomatoes (filled 2 large sheet pans) and after peeling, chopping and draining I only end up with 6 cups of tomatoes. Did you meant o say 8-12lbs and not tomatoes or am I doing something wrong ? I ask because I change the ratio of ingredients off of that and do not want to mess the PH if somehow I am measuring wrong though not sure how I would be.
Dried chilies do not offer the same freshness, fruitiness and immediate punch that fresh chilies do. On the other hand, though, they have a complexity and depth of flavor that fresh chilies simply do not possess: A raisiny, dried fruit sort of quality with a hint of smoked earthiness and a slow, lasting warmth rather than an initial burst of heat. In applications such as Salsa Roja, I much prefer this added depth and complexity as well as the consistency from batch to batch achieved by using a dried product.

That said, I always like to err on the side of safety, which is why I talk about it and do my best to make sure my recipes are safe. Your ratios sound okay (and any type of vinegar is fine, as long as it’s 5% acidity), since you use more tomatoes which are higher acid and less low-acid things like onion and peppers (did you add garlic?) and your ingredients are all less than half to match your vinegar, so go ahead and enjoy your salsa. 🙂

I have 2 Victorio brand steam canners that I love hard. They both have temperature gauges on top and show when you are in the correct temperature range to start timing. It’s been life changing! I had two other steam canners without the gauges that I got rid of and replaced with these. I have also found by watching the temp gauges that I can turn the heat down to med-low and still keep the temp in the correct range. Yay! It saves propane! (I can outside on my camp stove.)

I have been inundated with massive amounts of tomatoes this year! At one time I had 90 pounds of them on my porch… staring at me. I made your salsa yesterday. A bigger batch and a little more spices added, but it is great! I put up 10 pints and 6 half-pints. It at least made a dent in the buckets. Thank you for a great recipe. (Today there were 2 contractors that came by to give bids for some work we need done, they walked away with tomatoes!) I’m almost a neighbor- in Damascus, just southeast of Portland.
While I was visiting with my family in Mexico, my tía Minerva would prepare a small, fresh bowl of this salsa at least every other day. She would add all of the ingredients in a glass bowl and cook it quickly in the microwave! I will never forget my reaction when I saw her do this the first time! I instantly thought of my Mom and how she would have loved that quick method instead of boiling everything on the stove top.
We find that while the jalapenos created quite a spicy salsa right off the bat, it mellows considerably by the next summer. So, if you plan to make your salsa last through the year, you might want to make it a bit spicier than you prefer to allow for the peppers to mellow. Tasting (with a clean spoon) is key when you are adding your peppers to the vegetable mixture; so that you find a heat level you are comfortable with.
If I could suggest–instead of all the calculating and worry about PH in this, or other recipes due to minor changes–I bought an electronic PH liquid meter from Amazon for about $12.99 and you just dip it in the liquid food, pool, or aquarium–and instant PH! Your salsa with my lime juice exchange was a comforting 3.6 PH. I would never just make up a canning recipe and depend on that inexpensive meter to be safe, but it lets me double check on all my tomatoes & water bath canning and the recipes I carefully choose for safety from Pinterest.

And now a white boy from Scandinavia wants to tell you how to cook Mexican Food? Yeah, listen, I know how silly that sounds. But here’s the thing. Mexican food is as much of a state of mind as it is a type cuisine: it’s about forgoing the shredded cheddar cheese, the hard-shell tacos, the ground beef and the spice mixes. It’s about exploring the ingredients and key elements of the Mex part of the Tex Mex equation and about producing something that would be recognized as original and not foreign. And in my 15 years of research, I believe I’ve achieved just that.
I literally just made this. It’s soooo good. I did tweak the recipe a bit. I used fire roasted tomatoes along with the tomatoes with Chiles. I ended up using a whole onion and I pretty much doubled (maybe tripled) the cilantro. I also threw in a few dashes of cayenne pepper because I only had one jalepeno and it wasn’t quite enough. And I put in quite a bit of salt. But all these are personal preferances. The recipe was good as written but I made it how I personally like it. I’ll be keeping this one. I have a feeling ill be making it often, because my husband LOVES it.
I made this recipe and canned it today. I pretty much followed the recipe except that I put in 1/4 cup chopped cilantro (and left out a little bit of the onion and jalapeno, about 1/4 worth). Instead of cayenne pepper, I put in a finely chopped cayenne pepper since I had so many from my garden. My tomatoes were not Roma and were pretty juicy. Result: Very Hot!!! (so maybe a whole cayenne pepper was too much??), and only made 3 1/2 pints (I realize results can vary, and my tomatoes probably cooked down quite a lot). All in all, very tasty! PS: Thanks for reminding people to wear rubber gloves when handling hot peppers! I will probably try this again with the other variety of tomatoes that I grew this summer, Russian Black (the ones I use today are called Stupice).
Rinse tomatoes and peppers. Core tomatoes and score a small "X" in the blossom end. Place tomatoes and peppers on hot grill and close lid. Turn frequently until peppers are charred and blistered and pretty much black all over. Tomatoes should have some blackened spots and blistered enough to remove the skins. Remove from grill. Place peppers in a bowl and cover with plastic wrap to steam for several minutes. Let tomatoes cool a bit on a cutting board until you can handle.

Yes, I get 4-5 pints normally, though it does seem to depend on if I’m exact with the tomato measurements. For example, I always weigh them first and then cut and core – maybe I’m losing more flesh when I seed them, or having to cut some spots off. Then after processing if I’m 1/2 cup or so more than the measured amount, I throw them in, since the tomatoes are the acidic veggie and so more can be added. Lots of variables when canning!

I did make it and it was delicious.   I actually froze the tomatoes until I had time to use them.  I washed them and froze them whole in gallon size freezer bags.  When time to use, I defrosted tomatoes on counter top  for about two hours,  the skin came off easily and chopping the tomatoes up wasn’t a mess because it was still semi frozen.  This method worked perfectly actually.  Then I followed the instructions for this recipe.  The salsa turned out perfect.  Very tasty.  I canned several for later enjoyment.  Excellent recipe, thanks for sharing!

I’m trying to duplicate the salsa that our local Mexican restaraunt serves on request. I usually ask for the “hot stuff” and they know what I want. I asked what they call it in Spanish and they said Salsa Picosa. I made this recipe using the roasted method and it’s close. Now I wanna try the boiled method. Can u give that recipe. Do u boil all the ingredients? I’m using dry arbol peppers, do I boil them too? THANKS


I continued looking for the perfect canned salsa recipe and finally found the one that is now our favorite in a book from the library that published only tested recipes (I wish I had the title, but I just copied the recipe all those years ago before blogging). It used just one small can of tomato paste and only 3/4 cup of vinegar, so it’s still thick and the vinegar doesn’t overpower the flavor. (NOTE: according to the USDA, it is safe to substitute bottled lemon juice for the vinegar in this recipe if you wish, but NOT the other way – it is not safe to substitute vinegar for lemon juice in other recipes, since lemon is more acidic than vinegar.)
I read some comments below and came back for a quick reply.. I noticed someone questioning the sugar in the recipe. Please dont omit it. You cant taste the sweetness at all. It is necessary for the salsa to retain its color in the jars for a longer period of time. My late Mother was a GREAT home-,maker and I will never be quite as good a ‘canner’ as she was, but she swore that if you leave out the sugar, that the salsa will darken quicker.
Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the salsa into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.

Now to the topic at hand – I’ve had the same concerns as you, especially since my dear husband is Mexican! We loved the canned salsa I made for the first week or two, then it was too vinegary, so now I use it for stuff like zucchini squash to use it up. Haven’t tried it again because, well we don’t have enough tomatoes yet and am leery about the vinegar and how to make it spicy enough. I never thought to skimp on the onions to compensate!!!
This is truly delicious. I don’t have an abundance of tomatoes this year but what I have are going into this salsa, pizza sauce and roasted tomato soup. All to enjoy this winter. Another plus for this salsa is it is so nice and thick it stays on your chip. Not sliding off before you can get it to your mouth! I made the recipe as written, using a variety of tomatoes. My jalapenos are a little small and I would like just a wee bit more heat in a few jars, but that is the only adjustment I will make.

I used a cup and a half of the vinegar to get the pH where it needed to be (4.5). I processed using a pressure cooker. It was a big hit in our house!
A note on chili varieties: Mexican cuisine uses a wide variety of chilies with different names and characteristics – most of them essential to the final result of the dish they are used in. You should be able to rather easily acquire the chilies described in this (and future) post cheaply online. If you’re having trouble finding these chilies, I suggest you stick to a mix of Ancho (a mild, fruity variety) and Chipotle (a hotter, smoked variety). Both are readily available and this blend will still lend you quite a bit of the complexity.

Hello, I’ve been canning food for 45 years, including many salsas–but I do have to say that this is definitely a keeper and I’ll be using it in the future–thanks! I made a half batch as I was at the tail end of my tomatoes at 9:00 Monday night and had just enough to make half of your recipe. I made the “new” version with less vinegar and with sugar in it–it’s just wonderful! Only changes I made were to use Poblano hot peppers which are milder than Jalapenos and less of them as I wanted a more mild salsa and to sub out 2 tablespoons of lime juice for 2 tablespoons of the cider vinegar. Made for a bright, tasty salsa!
Using two kinds of chiles creates the depth in this salsa. The dried arbol chiles add a vivid pop of heat, and the jalapeños contribute a freshness that's perfect with tomatoes. The salsa comes from Barbara Mozqueda, a San Francisco cook who with her husband, Vidal, hosts big backyard parties. The salsa is excellent with Vidal's Carne Asada with Nopales and Spring Onions.
Prep all of your ingredients ahead of time. This makes it much easier in the long-run. The only difficult thing is removing the skins from the tomatoes ahead of time. To do this, make an “X” in the bottom of the tomatoes, than place in boiling water for 60 seconds. Then, remove the tomatoes from the water and place directly into a bowl if iced water to shock. The skins should slip right off. (I use my spider to transfer the tomatoes from the boiling water to the ice water without getting splashed.)
We use almost the same identical recipe. I add some fresh lime to add some acidity to the canning process. Also the recipe  my wife was given doesn’t “can” in the traditional way. After jars & lids are sanitized & filled, put lids on & tightened down, they are placed in a preheated 200 degree oven for 40 minutes. The oven is then turned off & left in oven overnight to cool off. We’ve made it this way for 4 years now & are teaching several others this fall

Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. BTW, I can’t find a ‘follow’ button on your site — except pointing to Pinterest, which I know nothing about.
I don't like messing with a water bath and bowl of ice water to peel the tomatoes; instead, I cut them in half and place them cut side down on a large baking sheet (really cram them in there in a single layer). I broil them for 3-4 minutes until the skins begin to pucker. Once they come out of the oven, the skins will wrinkle and peel right off and the baking sheet is easily cleaned. For this recipe, I use about three sheet pans of tomatoes (again the exact amount will depend on variety).
Pepper varieties can be mixed and matched in this recipe, but do not change total amount of peppers. The recipe as written produces a medium-hot salsa. Use more hot peppers and fewer mild peppers for a fierier salsa. Some examples of mild peppers include bell, banana, and Anaheim. Hot peppers include habanero, jalapeño, and Serrano. Do not change the total amount of peppers or the recipe may not be safe for canning.
I made this and cut the recipe in half, I have a question about safety because I accidently added 2 tsp sugar instead of 1.5 tsp ( half of 1 Tbls) I also added a bit more white vinegar and then 1/4 tsp cumin and 1/8 cup fresh lime juice. I didn’t peel the tomaties or get rid of the seeds and now I’m concerned I will die of botulism ….. I’m new to this so should I toss them or will it be ok?
I made this salsa using my husband’s grandmother’s 50+ year old pressure canner and it worked wonderfully. I cooked it on 10 lb pressure for 10 minutes. All the vegetables were the correct consistency (cooked). My family and friends love it, so today I am making a double batch using pint and 1/2 pint jars. I’m hoping it will last at least a little longer than than single batch I made a month ago. Hope this answers your question!

This salsa traditionally has Chiles de Arbol, tomatoes, garlic, salt and water, but some cooks like to add tomatillos (the medium size tomatoes with a husk), like I do in this recipe. This is a very spicy salsa, but you can adjust the spiciness to fit your own taste by reducing the amount of Arbol peppers. This salsa goes well with “Tacos al Pastor”, too. Most Taquerias in Mexico City that sell Tacos al Pastor offer this salsa to top your tacos with. Some people know this salsa as Salsa de Chile de Arbol and others as Salsa Taquera.

Bear in mind that Mexican Cuisine is an overwhelmingly large subject. In this series, we’ll shy away from the most complex of dishes and stick with some basic sauces, staples and dishes. They will be familiar to most, but probably not in the form you will see them here and that’s exactly my idea behind this series: to explore the recognizable in more authentic ways! By Mexican standards, the dishes in this series would mainly be considered street food, and that’s not a bad thing. There’s nothing wrong with street food… Street food is a huge part of Mexican food culture – and hey, tacos are street food!

Vegetables do end up being the focal point of many salsa recipes. This situation happens with good reason because of all the vitamins and minerals that can be gained from the different components into the dish. This arrangement provides an open invite to cooks to try out different combinations of vegetables to put together. This avocado salsa makes for a great boost of those vitamins and minerals along with different vegetables. The following ingredients are needed to make these authentic salsa recipes:
What kind of apple cider do you recommend using? I used Bragg’s and the taste of vinegar was so strong it was nearly inedible. I had to use baking soda to even out the flavor. (I’m not going to can this batch, just because I’m not sure the acidity is correct with my adjustments.) I followed the recipe precisely so I know I didn’t add too much vinegar. Any thoughts? 
Tomatoes are the most important ingredient. The fresher they are the better your salsa will taste. Look for the ripest ones you can find. Getting a good char on the vegetables is another key to developing the flavor. The lime juice brightens and enhances the flavor. The recipe calls for two serrano peppers but only add one if you want to reduce the heat.

Start with fresh ingredients. The fresher they are the better the results. Don’t use canned tomatoes. It gives the salsa a metallic taste. You’ll notice that there aren’t any limes in the recipe. Whhhaaattt? Limes throw off the balance of flavors by overpowering the flavor of the tomatoes. But, if you prefer your salsa with lime try adding the juice from only one lime.
If you are canning salsa, is important to use recipes that are formulated and tested for safe home canning. Salsa recipes for water bath canning must meet acidity-level requirements to prevent the growth of botulism bacteria. This recipe is from the “Zesty Salsa” recipe in the Ball Blue Book Guide to Preserving. The only differences between the recipe below and the “Zesty Salsa” recipe is this recipe is cut in half. The ratio of ingredients is the same and maintains the proper acidity level required for safe canning.

Given this is our first year gardening, in pots no less, our plants have not produced standard sized fruits and I’m concerned, they may not continue producing. We’ve been using the tomatoes as they’ve come in, so we’ve not been bombarded by any crops yet, though I know, it’s still early. Maybe if we move here in the next week or so, I may just put the plants right into the ground and see how they do.
Blanch and skin the tomatoes. To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.
IMPORTANT: Follow the directions carefully and exactly for each recipe. Use the amounts of each vegetable listed in the recipe. Add the amount of vinegar or lemon juice listed. You may decrease the amount of spices if desired. Do not can salsas that do not follow these or other research-tested recipes. These salsas may be frozen or stored in the refrigerator. Do not thicken salsas with flour or cornstarch before canning. After you open a jar to use, you may pour off some of the liquid or thicken with cornstarch.
I substituted some of the vinegar with lemon juice and it tasted wonderful! I also used sweet onions and red onions. I used half green and half yellow peppers. Do not use the insides of the jalapeños if you want it more on the mild side. I used store bought Roma tomatoes and it took more like 5 minutes but the skins did pull off pretty easy. I made a double batch and got 16 jars. It was a HIT with my family and they are asking for more plus my friends all want the recipe!

Thank you for such a well thought out recipe! I am a beginner and will be attempting your recipe today. I have some overripe tomatoes and just ripe tomatoes that would be perfect for canning. I am thinking of just doing two batches – one that I will refrigerate or eat right away and the other batch will be for canning. I have enough tomatoes to do both and I am devoted to getting them canned and store asap! Anyway – I will let you know how it turns out. You have made me hopeful that I can do it 🙂
Made this recipe today. Picked about two full plastic grocery bags of big boy tomatoes from garden which came out to almost exactly 10 cups (maybe 1/4 cup over) after peeling, crushing and draining. I used the traditional boil and ice bath since I hadn’t wanted to turn on oven since it was such a hot day. I altered the recipe only slightly. I ended up not using cilantro since after 3 days it went bad after picking it up from the grocery store. I did add about 2 or 3 Tbsp parsley flakes since I personally love parsley in almost everything I cook. Instead of garlic cloves I used three tsps chopped jar garlic which I always have on hand. I did add the sugar. I used 1 cup apple cider vinegar and ¼ cup lime juice. I did use the tomato paste as well. I used 5 large jalapenos and took the seeds and membranes out of half each. It gave it about almost MEDIUM HEAT if compared to store brands. Instead I used quart jars and somehow it came out to 7 quarts with about a pint left over I put in fridge to sample. I did the water bath as that is what I have always used. As soon as my father got home from work he took it out to try and my daughter was like mom hasn’t even tried it yet. We all tried it and absolutely loved the taste. Mom don’t eat salsa or spicy so she wasn’t included in the vote. Lol. 3 out of 3 loved it in my house. Bummed I had already promised my brother and my bfs mom a jar. Lol. I already know this salsa wont last through winter. Thank you so much for sharing this wonderful recipe. Saving for future years.
