For a hot salsa, I use 4 jalapenos with the seeds. For a mild salsa, I seed 1-2 of the jalapenos before chopping. Remember that the heat will lessen as the salsa sits, so I tend to error on being spicy than not. However, you can taste while it’s cooking so if you want more, you can always add more. It’s hard to correct spice level so if you don’t like things spicy, then start with only 1 jalapeno and go from there.
I made the salsa this last weekend with tomatoes from the garden about half slicers and half roma. I followed your easy method which works great for a working mom. But for some reason it turned out not very tomatoey, good spice, thickness, beautiful. I went ahead and canned it because I thought it might get better with time, and was scared to add tomato paste putting everything off balance. Were my tomatoes not ripe enough?
Ultra Gel is ultrafine cornstarch, which is used to thicken the salsa. It is now the preferred product for thickening when canning. I recently purchased Ultra Gel, which is GMO free. Clear Jel is a similar product. When I first made this home canned salsa recipe, it called for cornstarch, but Ultra Gel and Clear Jel are now recommended over corn starch for canning.
Combine all ingredients in a large saucepan and stir frequently over high heat until mixture begins to boil, then reduce heat and simmer for 20 minutes, stirring occasionally. Ladle hot salsa into pint jars, leaving 1/2-inch headspace. Adjust lids and process in a boiling-water canner for 15 minutes at 0–1,000 feet elevation, 20 minutes at 1,001–6,000 feet, and 25 minutes above 6,000 feet.
Hey Ann – I would recommend making the salsa and refrigerating (as a large batch), reheating on the day you want to process, and then putting the hot salsa into warmed jars before processing. Proper food safety for steam canning means the jars need to stay as warm as possible before filling, during filling, and right as they go onto the steam canner.
It’s a keeper for sure. Not too spicey for me as I am not a fan of hot Spicey. At first I thought it might be a tad too sweet but after canning process its perfect. I used Romas there is a hybrid I like to grow that produces much larger tomatoes also I used the paste as I like a thicker salsa. Thank you so much for this recipe. I’ve tried the recipe both ways simmering and no simmer. I like the no simmer only because it tastes a bit more fresh. I add the garlic and just a bit of lime juice. Was wondering whether or not it requires refrigeration. I’ve heard that storing tomatoes in the fridge is not good for them. My wife wants me to make a batch for her to enter in the salsa cook off at her school. Making over and over while the fresh tomatoes are in season
I made this recipe and canned it today. I pretty much followed the recipe except that I put in 1/4 cup chopped cilantro (and left out a little bit of the onion and jalapeno, about 1/4 worth). Instead of cayenne pepper, I put in a finely chopped cayenne pepper since I had so many from my garden. My tomatoes were not Roma and were pretty juicy. Result: Very Hot!!! (so maybe a whole cayenne pepper was too much??), and only made 3 1/2 pints (I realize results can vary, and my tomatoes probably cooked down quite a lot). All in all, very tasty! PS: Thanks for reminding people to wear rubber gloves when handling hot peppers! I will probably try this again with the other variety of tomatoes that I grew this summer, Russian Black (the ones I use today are called Stupice).

I make a very similar salsa recipe and am very intrigued by your method of removing skins. To tell you the truth, I always leave the skins on (gasp!) because I hate peeling tomatoes, and can’t say I notice a difference in taste/texture, although maybe it makes the salsa more acidic? For canning whole tomatoes, I like those that are firm, but small and round. They hold up better during canning if they are not overripe. Pearly Pink, Stupice, and Glacier are some of my favorites. No, Linda, this would not be safe to can using grape and/or cherry tomatoes, they are much to low in acid. There might be a salsa recipe developed specifically for them, but I don’t know of one. You can always freeze it and then it would be fine – and yes, process all in a food processor without peeling! I’ve frozen this salsa before and it does fine, so this may be a good option for using up your small tomatoes.
I am doing to try this for my first first canning/home salsa attempt ever. After reading your reviews in the comment section I think it should be a hint if I do it right on my end. That being said I have two questions. 1.) If I wanted a little more heat (LOVE all things spicy) do you have a recommendation? 2.) What is the ideal storage and what the self life? Assuming that the pH is 4.6 or lower, water bath canning is still the best option for long term storage. I know people have been screwing the lids on hot jars for years. My mom used to do it, and we all lived to tell about it. The thing is, as the years have gone on, the “bad bugs” are getting really bad. How many pathogens do we have out there now that didn’t exist before? The low pH should provide protection – should – BUT water bath processing provides another layer of protection. I figure I already put the time into growing, harvesting and processing – ten extra minutes is not a big deal to help protect my family.
I made this today, ate a few test bites (delicious!), took a quick Instagram shot, and then had to run to a volleyball tournament. During our down time, a few of my teammates saw the picture and begged me to run home and grab the salsa. I did, and came back with an extra bag of chips. Four girls and one and a half bags of chips and we demolished THE ENTIRE BOWL. I sent the link to at least five people who requested it and was begged to bring more to the next game. So thank you! You need some fresh lime juice to add a citrus taste to your salsa. Not only does it add flavor, but its acidity can also help inhibit the growth of microorganisms in the salsa mix in case you decide to store them for longer days. Although using an already manufactured lime juice is convenient, it may not be advisable for this recipe because what we’re aiming here is natural freshness.
Add the chile mixture to a blender and puree. Remove the tomato/onion mixture from the roasting pan and carefully add it to the blender, (it will be hot). Blend until smooth (you may need to work in 2 batches). Once everything is pureed, pour the mixture back into the pot over low heat adding a little water if the salsa is too thick. Stir in the sugar and lime juice and season with salt and pepper, to taste. Transfer to a large serving bowl and serve.
