Dried chilies do not offer the same freshness, fruitiness and immediate punch that fresh chilies do. On the other hand, though, they have a complexity and depth of flavor that fresh chilies simply do not possess: A raisiny, dried fruit sort of quality with a hint of smoked earthiness and a slow, lasting warmth rather than an initial burst of heat. In applications such as Salsa Roja, I much prefer this added depth and complexity as well as the consistency from batch to batch achieved by using a dried product.
Hi Laurie! Thank you for posting your canning experiences and recipes. I have NEVER attempted canned and have always found it freaking scary! Lol! However, I would like to try your salsa recipe. I have a question though. ..what’s the difference between a hot water bath and actually using the pressure cooker? How do you know which method to use? Is either safe for salsa? Salsa de Mesa, or Table Salsa, is a basic tomato salsa I learned to make early on. It’s simply tomatoes, chile serrano or jalapeño, onion, garlic and salt. Well, in our house, Mom would not add the garlic, but I do add it now. I also love a little fresh lime juice and a hint of crushed Mexican oregano. Traditional Mexican cooks, like my Mom and tías (aunts) always had a version of this salsa on the table whether they were serving, breakfast, lunch or dinner. This is why it is referred to as table salsa or Salsa de Mesa.
The acid ingredients used in salsa help preserve it and prevent botulism poisoning. You must add acid to canned salsas because the ingredients’ natural acidity may not be high enough. Commonly used acids in home canning are vinegar and lemon juice. Lemon juice is more acidic than vinegar, but has less effect on flavor. Use only vinegar that is at least 5% acid and use only bottled lemon juice.
I added a tea spoon of fine ground hot pepper. now thats the slight hot I like and no tomato paste. I like it wet …Great recipe. the first time I ever made salsa and I am glad I found the perfect recipe.. on top of it all. its just like a recipe of a so called semi friend. that had his own recipe I liked and he wouldnt give it up. well ..he can bite this. now!!
