I made this recipe and canned it today. I pretty much followed the recipe except that I put in 1/4 cup chopped cilantro (and left out a little bit of the onion and jalapeno, about 1/4 worth). Instead of cayenne pepper, I put in a finely chopped cayenne pepper since I had so many from my garden. My tomatoes were not Roma and were pretty juicy. Result: Very Hot!!! (so maybe a whole cayenne pepper was too much??), and only made 3 1/2 pints (I realize results can vary, and my tomatoes probably cooked down quite a lot). All in all, very tasty! PS: Thanks for reminding people to wear rubber gloves when handling hot peppers! I will probably try this again with the other variety of tomatoes that I grew this summer, Russian Black (the ones I use today are called Stupice).
Ultra Gel is ultrafine cornstarch, which is used to thicken the salsa. It is now the preferred product for thickening when canning. I recently purchased Ultra Gel, which is GMO free. Clear Jel is a similar product. When I first made this home canned salsa recipe, it called for cornstarch, but Ultra Gel and Clear Jel are now recommended over corn starch for canning.
Two years ago I was searching for a perfect salsa recipe for canning, but I had the wrong thing in mind. Instead of thinking of this delicious Mexican salsa that I love, I was thinking of typical jarred salsa. I looked up some recipes on the internet, ones that people said were popular. I tried them out. I was very unimpressed. I should know by now that most of the time…other peoples’ recipes don’t quite work out for me. Not that there’s anything wrong with them, I just apparently have unique tastes. 🙂
Some of the online recipes and comments totally scare me to think what some people are doing, either by direct choice or lack of canning knowledge, that endangers their families’ lives! There was a lot of unexplained illness and death in the old days that I think could be partly due to food storage issues. It’s the opposite of the Lottery–you want to be the 1 in a million to win the lottery, but you DON’T want to be the 1 in a million to win the botulism contaminated canning jar! Canning is one process that you MUST follow the safety rules whether you’re a natural rule follower or a rebel!
I made several batches of this salsa last year. The very best salsa. Everyone loves this salsa. Planting a lot more tomatoes this year. Plan on making & canning a room full of this salsa. I can’t wait for canning time. The very best salsa ever. Gave so much to friends & family & everyone wants more. I even decorated my jars & gave some for gifts. Love it
I just wanted to say thank you for sharing this recipe it really is the best salsa. My family is very picky when it comes to salsa, especially my husband. We tend to pick favorite Mexican restaurants more by their salsa than the menu items. This salsa is delicious and very much like a restaurant style salsa. Hi there! This salsa looks wonderful and it might be exactly what my husband is looking for (something less “tomato-y” on his taste buds). I’m wondering though if there is a good way to make a smaller amount to test it out. Would cutting everything in half work or would that alter the taste too much? I’d appreciate any thoughts or wisdom you have to share! 🙂
During processing, a vacuum is pulled in the headspace of the jar. This vacuum naturally pulls down the lid. (Giving us that distinctive “popping” noise when the jars seal.) On Tattler lids, you manually screw down the lids at the end of processing. This may create a false seal where the air in the headspace has not been properly evacuated, leading to food spoilage. Absolutely love this. You were right. Getting as much water out is so really important step. I drained as best I could with colanders then put in glass bowl. More liquid settled so I used a turkey baster to remove more liquid. Won’t ever make it another way. I have been looking for a salsa that has body and flavor and this is outstanding. I made my own tomato sauce as the tomatoes I got from local farmer were meaty and very flavorful. Thank you for posting this outstanding salsa recipe.
