We made this a couple of weeks ago and pretty much followed your recipe to the letter except we were using tomatoes from our own garden and didn’t bother to peel them. Chopping them pretty small helped. We also added more jalapenos because we like heat. We had several foodies here for game night later that evening and everyone raved about it. Thank you so much for the recipe. It’s a keeper.
For a hot salsa, I use 4 jalapenos with the seeds. For a mild salsa, I seed 1-2 of the jalapenos before chopping. Remember that the heat will lessen as the salsa sits, so I tend to error on being spicy than not. However, you can taste while it’s cooking so if you want more, you can always add more. It’s hard to correct spice level so if you don’t like things spicy, then start with only 1 jalapeno and go from there.
awesome recipe: I used 1 large can diced tomatoes drained, and 2 cans fire roasted tomatoes-only 1 drained. added 1/4 tsp cumin and 1 TBLSP fresh squeezed lime. did not do the peppers in a pan. I just pulsed them with the rest of the other ingredients. absolutely loved it. just want to know how well this recipe does when canning in a hot water bath. thank you soooooo much.
Explain, please, about tomato peels. My tomatoes are quartered or smaller, still with peels. What are the safety consequences? Also, BTW, thanks for the update on steam canners. I’ve used one for years (and for you canning newcomers, they’re cheap at Goodwill, etc.), with the reluctant, hard-won approval of a food science pro, only on condition of his anonomity (because of that research issue). Glad to know approval is now official!

Hmmm, no raw onions is a tough one but here is my suggestion: I’d try sautéing them a little, almost until they brown but not completely. Then for the tomatoes try roasting some yourself in the oven. That way you still get both the fresh and roasted feel. You can roast them with the garlic if you’re using the roasted garlic instead of the fresh. Let me know how it turns out! It’ll be a new trial!
We have adapted our salsa method from Well Preserved. What is special about their method is the straining of the tomatoes before packing them. This straining and sweating of the tomatoes is the same concept for pulling the moisture out of zucchini before cooking. By pulling the moisture out of the tomatoes, you allow the fruit to keep a more crisp texture when canned.
Thanks for such a great, informative website in regards to canning! We homeschool and I am teaching our kids a unit on canning. I’d done plenty of canning before but had always been scared/intimidated to modify recipes in the LEAST because I didn’t understand the science behind the process. Thanks to your website I’m starting to understand a lot more!!! This is especially helpful to be able to explain things to my science-minded “why” kid who wants to know EVERYTHING! Absolutely love this. You were right. Getting as much water out is so really important step. I drained as best I could with colanders then put in glass bowl. More liquid settled so I used a turkey baster to remove more liquid. Won’t ever make it another way. I have been looking for a salsa that has body and flavor and this is outstanding. I made my own tomato sauce as the tomatoes I got from local farmer were meaty and very flavorful. Thank you for posting this outstanding salsa recipe.
