Absolutely love this. You were right. Getting as much water out is so really important step. I drained as best I could with colanders then put in glass bowl. More liquid settled so I used a turkey baster to remove more liquid. Won’t ever make it another way. I have been looking for a salsa that has body and flavor and this is outstanding. I made my own tomato sauce as the tomatoes I got from local farmer were meaty and very flavorful. Thank you for posting this outstanding salsa recipe.
It needs to be cooked ahead of time so that the flavors are blended and you can taste it and make sure it’s how you want before canning. With the big pot for canning, I have a quilted hot pad under them instead of a rack. I never bought a rack because the hot pads work just fine. You need something under the jars but it can be as simple as a kitchen towel (I have not broken a jar in 3 years! So it must be okay, lol). I have some posts on the water bath method that explain my equipment in more detail.
As with all canning recipes, this recipe has been developed and tested specifically to make sure the pH level is safe for canning. Don't alter the amount of acidity (vinegar). You CAN substitute some of the vinegar for bottled lemon juice if you want to play around with flavor. Dried spices won't affect pH, so you can also experiment with those, but the amount of vegetables and tomatoes and acidity need to stay the same. I have not canned this recipe in a pressure canner, but I have given details in the post above about steam canners vs. water bath canners. Please do your own research to decide what method is best for you.
Douglas, I was just wondering about using the iron skillet or comal and the tomatoes. I tried a different recipe the other day and used my iron skillet to toast the ancho chilies, tomatoes and serrano peppers it called for. After blending all the ingredients, I used the same skillet to heat and cook the finished sauce. I only thought about it after the fact and wondered if the acidic sauce changed in flavor by using the iron skillet. I am sure our grandmothers used their iron for everything and never worried about the acid in them, so I am sure this question is moot, but I still want to know. I am not a very good cook, even though I try, and last weeks sauce did not turn out very tasty. I am going to give this one a try and hope it comes out better. Thank you for posting this.
Using two kinds of chiles creates the depth in this salsa. The dried arbol chiles add a vivid pop of heat, and the jalapeños contribute a freshness that's perfect with tomatoes. The salsa comes from Barbara Mozqueda, a San Francisco cook who with her husband, Vidal, hosts big backyard parties. The salsa is excellent with Vidal's Carne Asada with Nopales and Spring Onions.
In the blender, add bell peppers, onion, assorted peppers, lime juice, cilantro, salt, garlic powder, chili powder, and cumin. Once jalapenos have sat for 10 minutes, remove from zip-lock bag and pinch the skins off. Discard skins and place jalapenos in blender. Blend on medium speed until contents are blended but slightly chunky. Pour contents in pot with tomatoes.
If the recipe didn’t require a water or steam path (or pressure canner) then it needs to be stored in the refrigerator or freezer because it will spoil if left at room temperature. Recipes that call for a water or steam bath mean the salsa (once canned in jars and processed according to the recipe in a water or steam bath) can be stored on pantry shelves. This recipe will definitely work without the water or steam processing but it will need to be stored in the refrigerator or freezer. Hope that helps!
Combine all ingredients except cumin, oregano, and cilantro in a large pot and bring to a boil, stirring frequently, then reduce heat and simmer for 10 minutes. Add spices and simmer for another 20 minutes, stirring occasionally. Ladle hot salsa into pint jars, leaving 1/2-inch headspace. Adjust lids and process in a boiling-water canner for 15 minutes at 0–1,000 feet elevation, 20 minutes at 1,001–6,000 feet, and 25 minutes above 6,000 feet.
