This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! And yes, I think your idea to get the garden bed ready for next year is great- just go ahead and add some nice compost to it as you till so it can be working in the soil over the winter (under the weed-killing plastic, of course…).
I just made this wonderful salsa a couple of days ago with roma tomatoes. I 4X the recipe and ended up with 32 pints of salsa. We liked it so very much I am thinking of doing more with the 1 1/2 bushels of regular tomatoes that I have. Do you think that the regular tomatoes would have too much liquid in them or would the draining take care of that problem? I didn’t add the paste last time so I would probably add it for sure to make it thicker.
Here is a tasty homemade salsa to accompany your crispy tortilla chips. Many salsa recipes call for canned tomatoes and chilies (i.e., already cooked). I find that using fresh ingredients, and then cooking the salsa briefly, yields the best flavor. It sweetens the tomatoes and brings out their flavor. (Note, canned tomatoes have also been semi-cooked) The other purpose cooking it serves is to bring the mixture up to the required temperature for canning.
I am canning salsa my plan is to add baby carrots just prior to the water bath. My recipe (BEST EVER) calls for sweet baby carrots but I don’t wana cook them in the salsa I want them as fresh as possible. I hope it works, I’ve been canning for 30 years but have never attempted my salsa… I’ll keep you posted. I just maybe on to something. I added a tea spoon of fine ground hot pepper. now thats the slight hot I like and no tomato paste. I like it wet …Great recipe. the first time I ever made salsa and I am glad I found the perfect recipe.. on top of it all. its just like a recipe of a so called semi friend. that had his own recipe I liked and he wouldnt give it up. well ..he can bite this. now!!
