This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! Consequently, it’s probably easier to say what Mexican food is NOT: Mexican food is not nachos, hard shell tacos, fajitas or chili con carne. While their ingredients and components may be Mexican in origin, those are all (wonderful) Tex Mex dishes and consequently not part of this guide!
this is my 4th time to make this. it is such a hit I’ve been asked to make it several times. today i decided to try using my home canned tomatoes from last year to see if it worked. So much easier and may I say less time consuming than working with fresh tomatoes. It taste just as good if not better with my canned tomatoes. I used 4 quarts of qt. size tomatoes and it was perfect
Hi Mary Ann 🙂 We love cilantro, so I’ve never made this salsa without it. Most salsas actually have some cilantro in it, but if you hate the taste, you could substitute a bit of fresh parsley, or eliminate the cilantro altogether. I can’t guarantee the taste though, since my recipe uses cilantro as a big ingredient. The scoops method you mentioned sounds yummy!
