Hmmm, no raw onions is a tough one but here is my suggestion: I’d try sautéing them a little, almost until they brown but not completely. Then for the tomatoes try roasting some yourself in the oven. That way you still get both the fresh and roasted feel. You can roast them with the garlic if you’re using the roasted garlic instead of the fresh. Let me know how it turns out! It’ll be a new trial!
Oh this looks delicious Mel! Your recipe is so, so similar to mine! We go through it like it’s water. I made sure I canned plenty last summer to get us through the winter. I have tomatoes coming out of my ears again this year. Looks like I need to get busy! I kind of cheat though and don’t put mine in a steam bath. I just let my salsa come to a boil and keep my jars in a warm oven and the lids in simmering water. I pour the boiling salsa into the warm bottles, then put the lid on and screw the ring on and tip the bottles upside down and let them sit overnight. The lids seal every time. Don’t call the canning police on me !
A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. Add the chopped peppers to your saucepan. Chop your onions into pieces, weigh them, pulse in the food processor, and add to your saucepan. Skin your tomatoes, cut into smaller pieces, weigh them, pulse in the food processor, and add to your saucepan.
i have found adding a small amount of cucumber (just the skin and flesh, not the watery seedy part) to fresh salsa really intensifies/perks up the “fresh flavour” with the cilantro! have never gone back now that i have tried it…learned this tip in Puerto Morelos this year from a local….just add it to the blending stage in a recipe so the flavour is evenly distributed
Absolutely wonderful! Just finished making IT! I made it with all fresh ingredients and added some extra little skinny cucumbers! For extra flavor a bit of Heinz Ketchup and Sriracha sauce! My husband just left to pick up some bags of Doritos. We can’t always get the “stuff” we so took for granted in Canada. Thanks so much for this incredible recipe….we both appreciate it!
Blanch and skin the tomatoes. To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.
I love tomato season and this year I made salsa. Fire roasted salsa that I canned. I used tomatoes and poblano peppers from the farm stand and roasted them on a hot grill until they were charred and blistered all over. I love the flavor of grilled tomatoes and peppers. Then you just peel off the skins, chop chop, add a bunch of good stuff to the pot and you’ve got fire roasted salsa. It’s perfect for canning to enjoy year round.
Would you know how long it keeps in fridge when opened? I made this recipe yesterday and it is sooooo goood i had to restrain myself. I made the recipe before cooking supper, go figure! haha. Definitely a keeper, I will also teach my daughters to make it so it stays in the family! It was my first time canning with a bath, and it was a success. Thank you for your guide, sincerely.

Just finished preparing this and it turned out awesome! I basically took the original recipe and eyeball quadrupled it. Honestly the easiest recipe ever. My food processor wasn’t big enough so I did it in batches and stirred it all up in a mixing bowl. The apple cider vinegar cuts the acidity and the lime brings out all of the fresh flavors. The salt makes it all come together. Thanks.

You may decrease the amount of spices if desired. Do not can salsas that do not follow these or other research-tested recipes. These salsas may be frozen or stored in the refrigerator. Do not thicken salsas with flour or cornstarch before canning. After you open a jar to use, you may pour off some of the liquid or thicken with cornstarch.
This is IT!! Made this last year, and all the jars are gone! My family LOVED it , and this time I am pinning (in case i lose it again!!) I followed the recipe almost to the letter, adding a little extra salt (we like salsa on the salty side) and omitting the cilantro (personal preference, I HATE it, kiddos and hubby can add fresh when it is on their plate)
