Following exactly to start with..except am throwing in a couple of Thai peppers along with the 4 smallish jalapenos...which I may regret...them things are supposed to be killer hot. I will say, that it is taking significantly longer than the 10 minutes prep time for the water to simmer off (step 2), but I'm in no huge hurry....I have wine.

OMG this is so good!! I made a batch at 7am for a bbq this afternoon and ate half of it for my breakfast, so had to replenish it with another can of tomatoes (only had a can of chopped tomatoes left, which worked fine, plus another pinch of all the other ingredients… Amazing! Only thing I had to change was using garlic powder as I had no fresh, still fine. Used 1 green chili and half a red, no seeds, perfect! And 1/4 tsp sugar, as I’m not a huge fan of sweetness. I have now made 61!jars of salsa and not sure it will get us through til next summers tomatoes! For the past month my family is eating 2 jars a week, and would eat it daily if I didn’t ration it! I got some extra tomatoes this week that I was going to just quarter and can, but made the last 13 jars instead since they love it so much! I usually share my canning with friends but they won’t get much of this!I highly recommend this recipe. We like the addition of bell peppers!
Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!
Just finished preparing this and it turned out awesome! I basically took the original recipe and eyeball quadrupled it. Honestly the easiest recipe ever. My food processor wasn’t big enough so I did it in batches and stirred it all up in a mixing bowl. The apple cider vinegar cuts the acidity and the lime brings out all of the fresh flavors. The salt makes it all come together. Thanks.
Well – I have to share with you this recipe was amazing! I’m a first time vegetable gardener and was a bit intimidated by the whole canning gig. I guess I had always felt growing veggies and canning are like “peas and carrots” as Forest Gump would say. I read a ton of recipes but yours caught my attention because of the step by step process and super great pics. I followed it to the “T”. My entire family was so happy for me but I have to say thank you to the creator as you made my first canning journey a complete success. I look forward to a bright future in the garnering world 🙂
Hi Laurie, I want to thank you for your quick reply! You were right about the equal amounts of cider vinegar and lemon juice, it did give the salsa a bit of a Strange but not bad taste to it. I’m still hoping that the zing gets better as it sits though, or will the flavor be more pronounced? Either way, I’m still going to add more fresh tomatoes and other ingredients to it before I serve it to give it a fresher taste and maybe that will help. Thank you for your time
Spread a kitchen towel on the counter. Use your jar lifter to remove warm jars from canner, drain, and line up on the towel. Use your canning ladle and funnel and add the salsa to the warm jars leaving 1/4-inch headspace. Wipe the rims. Use your magnetic lid lifter to lift lids out of the warm water, center lid on the jar, and screw on band until it is fingertip tight.
Would you know how long it keeps in fridge when opened? I made this recipe yesterday and it is sooooo goood i had to restrain myself. I made the recipe before cooking supper, go figure! haha.
