I have been canning salsa for years with an old-school hand me down recipe (which we love) but my recipe instructs to put 1 tbsp. lime juice per jar (quart)… not added to salsa mixture. I have tomatoes ‘draining’ tonight and am going to try the apple cider vinegar this time around. I have not read this recipe before and an curious the taste comparison… I have read that it is safe for water bathing, I’m thinking the time would remain the same.
Live and learn Mexican cooks. It ain’t a perfect world. The color varies with different chilies. Not using dried guajillo’s it’s gonna be pink. You can thicken it with torn corn tortillas or meal then place in a blender and puree to thicken (NOTE – do not add hot ingredients into a blender – it will blow hot liquid everywhere from the released steam – don’t ask how I know this). You can change the taste using your imagination. Dried chilies are almost always bitter.
I have a beloved salsa recipe I have used for years. I canned a ton of it last year and thought I would try your recipe for some this year. I have a daughter who does not love cumin. Is the cumin flavor really strong in this salsa? I think the rest of my family would love it! Also do you have a good spaghetti sauce recipe for canning? Thanks for all you do! The key to this recipe is to char the tomatoes and peppers on the stovetop. I tried to do it in the oven once and roast the tomatoes & peppers, bad move. It will take you about 20 minutes, but sooooooo worth the wait. You’ll need to rotate the veggies from time to time, so all the sides are pretty even. Here is what the vegetables will look like once they are done:
For a hot salsa, I use 4 jalapenos with the seeds. For a mild salsa, I seed 1-2 of the jalapenos before chopping. Remember that the heat will lessen as the salsa sits, so I tend to error on being spicy than not. However, you can taste while it’s cooking so if you want more, you can always add more. It’s hard to correct spice level so if you don’t like things spicy, then start with only 1 jalapeno and go from there.
This salsa traditionally has Chiles de Arbol, tomatoes, garlic, salt and water, but some cooks like to add tomatillos (the medium size tomatoes with a husk), like I do in this recipe. This is a very spicy salsa, but you can adjust the spiciness to fit your own taste by reducing the amount of Arbol peppers. This salsa goes well with “Tacos al Pastor”, too. Most Taquerias in Mexico City that sell Tacos al Pastor offer this salsa to top your tacos with. Some people know this salsa as Salsa de Chile de Arbol and others as Salsa Taquera.
I continued looking for the perfect canned salsa recipe and finally found the one that is now our favorite in a book from the library that published only tested recipes (I wish I had the title, but I just copied the recipe all those years ago before blogging). It used just one small can of tomato paste and only 3/4 cup of vinegar, so it’s still thick and the vinegar doesn’t overpower the flavor. (NOTE: according to the USDA, it is safe to substitute bottled lemon juice for the vinegar in this recipe if you wish, but NOT the other way – it is not safe to substitute vinegar for lemon juice in other recipes, since lemon is more acidic than vinegar.)
We have adapted our salsa method from Well Preserved. What is special about their method is the straining of the tomatoes before packing them. This straining and sweating of the tomatoes is the same concept for pulling the moisture out of zucchini before cooking. By pulling the moisture out of the tomatoes, you allow the fruit to keep a more crisp texture when canned.
I love Mexican salsa because I can use it as a dip for my chips and as an ingredient for other dishes like casseroles, pork chops, and meatloaf. What I usually use is the jarred variety, but after trying some homemade Mexican salsa during a family dinner, I was amazed by its fresh taste. At that point, I tried to search for the best Mexican salsa recipe which can be superior to the jarred salsa that I usually buy in supermarkets.
This recipe is great as long as you don’t use all of the cooking water when adding the vegetables to the blender. If you do, you’ll end up with the runny, watery “soup” that commenters above complained about. Spoon the boiled vegetables into the blender, then add the water from the pan *as needed* to liquify the ingredients. You need maybe half the amount of water that you boiled the ingredients with. And if it’s still too watery, simmer it for longer during the final stage until the consistency is right. I think the recipe should be re-worded a little to reflect this issue.
As you will notice when we dive a little further into these recipes, Mexican food has a stunning range of somewhat special ingredients. From Masa Harina, the essential ingredient of corn over a wide array of chilies either fresh, dried or ground to Mexican oregano and tomatillos. Some of these may at first glance seem foreign and difficult to come by, but fear not we’ll discuss the individual ingredients as we go and they’ll be easier to come by than you think.
