I am going to try this recipe today using roma tomatoes. I just wanted to add, most recipes call for de-seeding and squeezing out all tomato juice from the tomatoes. I have learned that you can cook down the juice and seeds, ( one year I had 2 quarts of tomato liquid …slowly cooked down to 1 half pint ) this way all my ingredients were fresh garden and not canned. The thickened tomato seed juice was so close to paste that it thickened the salsa I made. I just incorporated it into my tomatoes measurements. Trying that with your recipe. Ty
The exact weight of tomatoes will depend on the variety you use. I like to use roma (paste tomatoes) if I have them because the water content is less but any kind of tomato will work. I made this today, ate a few test bites (delicious!), took a quick Instagram shot, and then had to run to a volleyball tournament. A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. I added a tea spoon of fine ground hot pepper. now thats the slight hot I like and no tomato paste. I like it wet …Great recipe. the first time I ever made salsa and I am glad I found the perfect recipe.. on top of it all. its just like a recipe of a so called semi friend. that had his own recipe I liked and he wouldnt give it up. well ..he can bite this. now!!
