I decide it’s the chips and salsa I really want and since I’m headed to the grocery store anyway, I decide to try my hand at restaurant style salsa. Found your recipe while in the store, and made it asap when I got home. uncouldnt believe how easy it was! My mind was a bit blown that canned tomatoes are the base ingredient. My only critique would be to leave off the cumin or at least try it in a small bowl to make sure you like it before adding to the whole mixture.

What’s interesting though is that the largest manufacturer of canning jars and lids (they make Ball, Bernardin, Kerr and Golden Harvest products) recently changed their guidelines to now specifically instruct consumers NOT to boil/sterilize the lids, otherwise a poor seal will result. Instead they recommend extending the processing time to 10 minutes in an effort to kill any bacteria that might be present in the jars.
Blanch and skin the tomatoes. To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.
Why this meticulous approach to chili picking? Well, for the simple reason that it adds a stunning complexity to the salsa and provides the best possible product: a salsa roja that is at one time bright, fresh, fruity and acidic and at the same time rich, deep and complex in flavor with a noticeable, warming but not overpowering heat profile. This, in my own humble words, make it the PERFECT all-round salsa for every application including dipping, slathering, spreading, cooking or mixing.
I haven’t yet tried your salsa recipes. I have been looking for information to can some killer cherry salsa I came up with a few years ago. Have only eaten it fresh, but wanted to can it and have some last throughout the year. So I think from some of the things I have been reading is that I need to use lemon juice, (bottled for strength consistency) to make it acidic so it will not spoil. Or perhaps vinegar. I do already use lime in my salsa, but think it must need the lemon or vinegar too. Basically I just replace tomatoes with cherries and use several different chilies and make it pretty hot.
The key to canning the freshest tomato salsa is doing so when the tomatoes are in peak season. Also be sure to find a canning recipe that is tried and true, because canning tomato salsa improperly can cause it to spoil. And peeling the tomatoes first is worth the effort. Canning tomato salsa is not the same as making it fresh to eat the same day. The skins will become tough and chewy once canned.
This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! I’ve tried the recipe both ways simmering and no simmer. I like the no simmer only because it tastes a bit more fresh. I add the garlic and just a bit of lime juice. Was wondering whether or not it requires refrigeration. I’ve heard that storing tomatoes in the fridge is not good for them. My wife wants me to make a batch for her to enter in the salsa cook off at her school. Making over and over while the fresh tomatoes are in season
Hi, I came across your recipe and am eager to try it, but have never done any canning before, so I dont have a canner. I’ve tried doing a little research, and am a little overwhelmed, so I thought I would ask the source. Is this recipe safe to can in a water bath method, just covering it with boiling water for the recommended time in a big pot? Forgive me if that is a stupid question!
