Salsa Roja, as stated above is a red salsa in which the ingredients tomatoes, hot peppers, white onions and all have been cooked and blended as part of the preparation. This creates an intensely flavorful, relatively runny salsa perfect for slathering on tacos or using as a dip, but also suitable for many other uses. This versatility has made Salsa Roja a staple at many Mexican restaurants as a table-side dipping sauce, often made fresh in house.
Explain, please, about tomato peels. My tomatoes are quartered or smaller, still with peels. What are the safety consequences? Also, BTW, thanks for the update on steam canners. I’ve used one for years (and for you canning newcomers, they’re cheap at Goodwill, etc.), with the reluctant, hard-won approval of a food science pro, only on condition of his anonomity (because of that research issue). Glad to know approval is now official!
I have never bough store salsa, my mom and I have always made lots of salsa every fall with our produce from our garden! I’m willing to give a few toes to bet it’s the best. salsa. ever. EVER! 🙂 However, it requires a lot more time and more romas than your recipe, so I stayed up last night after putting the kids to bed and made yours. I loved your trick of putting the romas in the oven – life changing! The salsa is delicious, thank you! Would you know how long it keeps in fridge when opened? I made this recipe yesterday and it is sooooo goood i had to restrain myself. I made the recipe before cooking supper, go figure! haha. Definitely a keeper, I will also teach my daughters to make it so it stays in the family! It was my first time canning with a bath, and it was a success. Thank you for your guide, sincerely.
I have been making salsa like this for years with a couple tweaks I love garlic so I roast everything then chop it up nicely I also add a little garlic salt to brighten up the flavor and if at all possible use home grown veggies especially the tomatoes. People rave over this salsa thanks for this site I love Mexican food especially salsa with lots of peppers in it
I used the suggestion to use about half the cooking liquid maybe less. It turned out as expected for me. I used a variety of very ripe homegrown tomatoes and homegrown serrano chiles. Flavor was great. I used a Vitamix to completely blend everything so skins and seeds disappeared. The Vitamix lets steam escape so no issue in blending hot ingredients.
