I cut this recipie in half and we don’t like green bell peppers but added radishes. Can I do that? Also, in cutting this recipie in half, I used 3 Serrano peppers and 1 jalapeño. I also forgot the tomato sauce as I just didn’t see it and I added 6 oz of tomato paste. I really cut everything in half but as far as changes I’m not sure if they are safe changes or not because I don’t know alot about canning salsa other than I really want to. Can you please help me out?

this is my 4th time to make this. it is such a hit I’ve been asked to make it several times. today i decided to try using my home canned tomatoes from last year to see if it worked. So much easier and may I say less time consuming than working with fresh tomatoes. It taste just as good if not better with my canned tomatoes. I used 4 quarts of qt. size tomatoes and it was perfect
This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! I just made this wonderful salsa a couple of days ago with roma tomatoes. I 4X the recipe and ended up with 32 pints of salsa. We liked it so very much I am thinking of doing more with the 1 1/2 bushels of regular tomatoes that I have. Do you think that the regular tomatoes would have too much liquid in them or would the draining take care of that problem? I didn’t add the paste last time so I would probably add it for sure to make it thicker.
I did make it and it was delicious.   I actually froze the tomatoes until I had time to use them.  I washed them and froze them whole in gallon size freezer bags.  When time to use, I defrosted tomatoes on counter top  for about two hours,  the skin came off easily and chopping the tomatoes up wasn’t a mess because it was still semi frozen.  This method worked perfectly actually.  Then I followed the instructions for this recipe.  The salsa turned out perfect.  Very tasty.  I canned several for later enjoyment.  Excellent recipe, thanks for sharing!
I am canning salsa my plan is to add baby carrots just prior to the water bath. My recipe (BEST EVER) calls for sweet baby carrots but I don’t wana cook them in the salsa I want them as fresh as possible. I hope it works, I’ve been canning for 30 years but have never attempted my salsa… I’ll keep you posted. I just maybe on to something. Absolutely love this. You were right. Getting as much water out is so really important step. I drained as best I could with colanders then put in glass bowl. More liquid settled so I used a turkey baster to remove more liquid. Won’t ever make it another way. I have been looking for a salsa that has body and flavor and this is outstanding. I made my own tomato sauce as the tomatoes I got from local farmer were meaty and very flavorful. Thank you for posting this outstanding salsa recipe.
