So pregnant me hears a Mexican song on the radio and immediately envision myself eating dinner at Mexico Restaurant. I decide it’s the chips and salsa I really want and since I’m headed to the grocery store anyway, I decide to try my hand at restaurant style salsa. Found your recipe while in the store, and made it asap when I got home. uncouldnt believe how easy it was! My mind was a bit blown that canned tomatoes are the base ingredient. My only critique would be to leave off the cumin or at least try it in a small bowl to make sure you like it before adding to the whole mixture.
I made this salsa exactly as the recipe stated with all home grown ingredients. I didn’t want to stray from the recipe since I spent so much effort in growing all the produce in it. There was one small exception in that I used orange peppers instead of green peppers since my green peppers were not ready to harvest. This salsa is incredible! Best I have ever tasted. My sons are salsa fanatics and they fought over the last jar! So often recipes don’t turn out to taste as one would hope but this surpassed all expectations. Plus it is so easy! I am making a double batch as we speak so I can give some to my boys to take to college with them.
On adjusting recipes: I know you want to “make this your own,” but with canning recipes, you can only do so much. It’s important for food safety to have the proper ratio of acidic to non-acidic foods. The tomatoes are acidic, but the peppers, onions, and garlic are not. That’s why you must add the vinegar, and you can’t really mess with the amounts of peppers. You could, however, fiddle with green peppers and colored bells, or sub some of the jalapenos out for a milder pepper if you don’t like it so spicy. Just don’t be too generous with your helpings and overdo the amounts. That’s one thing I love about this recipe – it gives quantities in cups, rather than forcing me to scratch my head and wonder which onion is “small” and which green pepper fits the “medium” category. I just made my 4th batch of this salsa tonight. We have a huge vegetable garden and have been making it when enough tomatoes ripen. Absolutely love this recipe. I followed it exactly and have made 36 pint size jars. Have given away about half so I will make another 2 batches when the rest of the tomatoes are ready. Everyone loves it. My husband and I made one batch lickety-split last evening between my building a house with Habitat for Humanity all day and Beauty and the Beast at the Oregon Shakespeare Festival at 8:00 pm! Luckily he was here to chop the onions, peppers, garlic because rather than 7 jalapeno peppers he said, “Let’s try one and add more when we eat it should we choose.” Smart Man, indeed! Our jalapenos, fresh from the garden, must be the very hot type as even with just one, there is still some kick to the salsa! I’ve given small jars to some of my foodie friends here in the hood to get their opinions and share the love!. Suffice it to say that I am “home” with your recipe! Thanks for sharing so completely. I too am a new Steam Canning advocate. As a Master Recycler as well, the idea of using so much less water is right up my alley and for years we’ve known steam is hotter than boiling. Oh my goodness! I made one batch of this and it was very good. But I “chopped” the tomatoes in my Vitamix so it wasn’t very chunky. Just made a double batch and hand chopped the tomatoes. I let them drain as I was chopping them. I’m always concerned about the measurements for tomatoes since that is the iffy, low-acid ingredient. (When I read about cooks reducing the salsa or draining the salsa with a slotted spoon as they jar it, I wonder how you know if your final product is safe?) At any rate, I added 3t of bitter-sweet Spanish paprika and 2T of sugar. I literally had to swat my husband away from the pot while I was working after I gave him a taste. Phenomenal! (And I’m assuming that those minor amounts of extra spices won’t alter the acidity unfavorably.) Thanks for a great recipe!
I don't like messing with a water bath and bowl of ice water to peel the tomatoes; instead, I cut them in half and place them cut side down on a large baking sheet (really cram them in there in a single layer). I broil them for 3-4 minutes until the skins begin to pucker. Once they come out of the oven, the skins will wrinkle and peel right off and the baking sheet is easily cleaned. For this recipe, I use about three sheet pans of tomatoes (again the exact amount will depend on variety).
The one thing I learned when teaching myself to can salsa was that in order to use a water-bath canner to make salsa shelf stable, it’s important to use a recipe from a trusted source that uses USDA guidelines. This is because there are so many low-acid ingredients in salsa (peppers, onions, and garlic) that it creates a delicate balance between the acid (tomatoes and usually another ingredient like vinegar or lemon juice) and the low-acid ingredients.
Sadly, my search for the best recipe wasn’t at an end, though. We found that the salsa wasn’t very spicy and when I took the time to look at the ingredients of bottled lemon juice (it must be bottled – fresh lemon juice doesn’t have the consistent acid level for canning) I saw that it’s full of preservatives! Great. I’ve got all these organically grown vegetables and I’m adding preservatives. Double boo.
I made this and cut the recipe in half, I have a question about safety because I accidently added 2 tsp sugar instead of 1.5 tsp ( half of 1 Tbls) I also added a bit more white vinegar and then 1/4 tsp cumin and 1/8 cup fresh lime juice. I didn’t peel the tomaties or get rid of the seeds and now I’m concerned I will die of botulism ….. I’m new to this so should I toss them or will it be ok?
A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. Add the chopped peppers to your saucepan. Chop your onions into pieces, weigh them, pulse in the food processor, and add to your saucepan. Skin your tomatoes, cut into smaller pieces, weigh them, pulse in the food processor, and add to your saucepan.
Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and cook for 30 more minutes.
Hi there! This salsa looks wonderful and it might be exactly what my husband is looking for (something less “tomato-y” on his taste buds). I’m wondering though if there is a good way to make a smaller amount to test it out. Would cutting everything in half work or would that alter the taste too much? I’d appreciate any thoughts or wisdom you have to share! 🙂
I’ve never attempted to use canned tomatoes in the recipe, and can’t remember the last time I purchased store tomatoes, so I’m not sure how much liquid is in there in proportion to the fruit. My best guess to make this work would be to drain the tomatoes and then weigh them – but this would be a little high since the starting weight with raw tomatoes includes skins, seeds and excess juice that’s removed/drained off. Maybe around 16-80 pounds drained tomatoes? When I’ve drained my tomatoes after chopping, I end up with around 7 quarts in volume. There is no simple answer, unfortunately. If you give it a go, you may way to get pH strips to test the finished salsa and make sure the pH is below 4.6 for safe canning. If not, you could freeze, or add more vinegar.
This recipe is a great starting point to develop your own Mexican salsa recipe. Adjust any or all of the ingredients to suit your tastes. Although this recipe calls for charring the chiles, you can also make it without charring them. Add more chiles for a spicier sauce or reduce the number for a milder version. Substituting jalapeño chiles for the serrano chiles will make a milder salsa too.
Salsa Roja, as stated above is a red salsa in which the ingredients tomatoes, hot peppers, white onions and all have been cooked and blended as part of the preparation. This creates an intensely flavorful, relatively runny salsa perfect for slathering on tacos or using as a dip, but also suitable for many other uses. This versatility has made Salsa Roja a staple at many Mexican restaurants as a table-side dipping sauce, often made fresh in house.
Made this recipe today. Picked about two full plastic grocery bags of big boy tomatoes from garden which came out to almost exactly 10 cups (maybe 1/4 cup over) after peeling, crushing and draining. I used the traditional boil and ice bath since I hadn’t wanted to turn on oven since it was such a hot day. I altered the recipe only slightly. I ended up not using cilantro since after 3 days it went bad after picking it up from the grocery store. I did add about 2 or 3 Tbsp parsley flakes since I personally love parsley in almost everything I cook. Instead of garlic cloves I used three tsps chopped jar garlic which I always have on hand. I did add the sugar. I used 1 cup apple cider vinegar and ¼ cup lime juice. I did use the tomato paste as well. I used 5 large jalapenos and took the seeds and membranes out of half each. It gave it about almost MEDIUM HEAT if compared to store brands. Instead I used quart jars and somehow it came out to 7 quarts with about a pint left over I put in fridge to sample. I did the water bath as that is what I have always used. As soon as my father got home from work he took it out to try and my daughter was like mom hasn’t even tried it yet. We all tried it and absolutely loved the taste. Mom don’t eat salsa or spicy so she wasn’t included in the vote. Lol. 3 out of 3 loved it in my house. Bummed I had already promised my brother and my bfs mom a jar. Lol. I already know this salsa wont last through winter. Thank you so much for sharing this wonderful recipe. Saving for future years.
You can’t really appreciate this salsa until about a month after canning. I’ve tasted many versions of homemade canned salsa and this is the best! Has a very nice consistency. Here’s what I found: I tasted it during the canning process and was somewhat disappointed at the vinegar taste but that pretty much disappeared after it cured for a month. I had added almost all of the sugar to counter the vinegar flavor and was sorry I did because it was a little sweet after curing. (I used Big Boy and Early Girl tomatoes.) The ground pepper was also very strong during the canning process but mellowed after a month. I like a medium hot salsa and was a little shy on the jalapenos…used only 3. I would definitely increase that to 5 or 6. In the meantime, I’m stirring some red pepper flakes into each jar as I open them. I also couldn’t taste the cilantro after curing so I would increase that as well. Thanks for sharing this recipe!
Well – I have to share with you this recipe was amazing! I’m a first time vegetable gardener and was a bit intimidated by the whole canning gig. I guess I had always felt growing veggies and canning are like “peas and carrots” as Forest Gump would say. I read a ton of recipes but yours caught my attention because of the step by step process and super great pics. I followed it to the “T”. My entire family was so happy for me but I have to say thank you to the creator as you made my first canning journey a complete success. I look forward to a bright future in the garnering world 🙂

Please note that this salsa roja recipe uses whole, dried chilies which is my absolute preferred and highly recommended way of doing things. If, for whatever reason, you would like to use dried, ground chilies instead, you should add them near the end at step #7 in the recipe below.
Hi, I came across your recipe and am eager to try it, but have never done any canning before, so I dont have a canner. I’ve tried doing a little research, and am a little overwhelmed, so I thought I would ask the source. Is this recipe safe to can in a water bath method, just covering it with boiling water for the recommended time in a big pot? Forgive me if that is a stupid question!
