I substituted some of the vinegar with lemon juice and it tasted wonderful! I also used sweet onions and red onions. I used half green and half yellow peppers. Do not use the insides of the jalapeños if you want it more on the mild side. I used store bought Roma tomatoes and it took more like 5 minutes but the skins did pull off pretty easy. I made a double batch and got 16 jars. It was a HIT with my family and they are asking for more plus my friends all want the recipe!
Hi Jenn, with only a tablespoon of sugar in the entire batch I have no idea why it would have been too sweet. It may just seem sweet because it wasn’t hot and perhaps hot salsas are what you’re used to? The heat factor is related to the jalapenos – did you see the recipe note about the membranes? That’s where they heat lies so if you want a hot salsa leave the membranes intact. Be sure also to use the freshest jalapenos you can find, otherwise they tend to lose some of their heat.
Hey Beth – sorry about that. The notes somehow went missing. I’ll add them again, but here’s a great article about canning salt. Basically, you can sub in kosher salt or even table salt (although use a bit less since the granules of table salt are finer)…it’s best to try to use a kosher salt without any additives (canning or pickling salt is pure salt without any anti-caking agents) if possible.
Step 10: Add your jalapeno. Mince it up very small and try not to touch any part of it with your hands. Keep your hand on the outside of the pepper and slice it thinly, then mince without touching. This is so you do not get any capsaicin on your hands, then your mouth, nose, or eyes. That will hurt. And washing your hands will not completely remove it. Avoid touching it if at all possible.
I was really nervous about this recipe I searched and searched and searched this is the one I decided to do. There were a lot of reviews but most of them said all looks good all got to try this I wish they would only post if they did make it there was a couple that said it was fantastic taste was good so I chose this one. This recipe is amazing if you want restaurant style salsa you need to try this one in my portion I put one Serrano No Seeds no ribs in everybody else’s portion to whole Serrano’s. You have to try this recipe it is truly truly truly amazing and so delicious

This looks INCREDIBLE!! I also judge Mexican restaurants on the quality of their salsa. I became ADDICTED to chips and salsa when my son was first eating solids. Since there is little time to eat when caring for an infant, I would be feeing him with one hand and snacking on chips and salsa with the other. It is now my go-to when I’m having a snack craving!
Hi, I’m gad to see this blog still up and running. I have been canning salsa for years with an old-school hand me down recipe (which we love) but my recipe instructs to put 1 tbsp. lime juice per jar (quart)… not added to salsa mixture. I have tomatoes ‘draining’ tonight and am going to try the apple cider vinegar this time around. I have not read this recipe before and an curious the taste comparison… I have read that it is safe for water bathing, I’m thinking the time would remain the same.

I made this recipe yesterday. It was very labor intensive but I’m happy to report after sampling the salsa today that it was worth it. I have to admit that after tasting the salsa shortly after starting the cooking that I very skeptical it but the vinegar taste mellowed as it cooked and the flavors melded together beautifully. After 10 minutes of cooking, my onions and peppers still looked raw so I cooked it for about 30-35 minutes. I would recommend saving some of the tomato juice that drains off after preparing the tomatoes — my tomatoes ended up being on the dry side so I added a little juice back to the cooking salsa until it loosed up a bit and I was happy with the consistency.

What’s interesting though is that the largest manufacturer of canning jars and lids (they make Ball, Bernardin, Kerr and Golden Harvest products) recently changed their guidelines to now specifically instruct consumers NOT to boil/sterilize the lids, otherwise a poor seal will result. Instead they recommend extending the processing time to 10 minutes in an effort to kill any bacteria that might be present in the jars.

I have a question though. ..what’s the difference between a hot water bath and actually using the pressure cooker? How do you know which method to use? Is either safe for salsa? Many people, not only in America but certainly across the globe have a warped perception of Mexican food. They either draw a likeness between Mexican food and Tex-Mex or they overly simplify things. Firstly, Tex Mex is not Mexican Food! Tex Mex is American food, made in America by either Latin American or American chefs drawing influences from a combination of American, Mexican and Latin American dishes. Now calm down, children, I’m not saying that proper Tex Mex is inferior to real Mexican food, I’m saying it’s a totally different animal altogether.
This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! This is a great salsa for beginners in Mexican cuisine. There are other salsas that are a little bit more complicated, and which require that you char the tomatoes and other veggies first. This salsa roja recipe, however, just requires that you blend the raw vegetables together, and then cook them with a bit of olive oil before adding onions and cilantro.
If I could suggest–instead of all the calculating and worry about PH in this, or other recipes due to minor changes–I bought an electronic PH liquid meter from Amazon for about $12.99 and you just dip it in the liquid food, pool, or aquarium–and instant PH! Your salsa with my lime juice exchange was a comforting 3.6 PH. I would never just make up a canning recipe and depend on that inexpensive meter to be safe, but it lets me double check on all my tomatoes & water bath canning and the recipes I carefully choose for safety from Pinterest.
Water bath canning involves submerging the jars in boiling water for a set period of processing time. It is suitable for high acid foods. Pressure canning (not pressure cooking) involves processing the jars in a sealed pressure canner at elevated temperature and pressure. You must can all low acid foods. You can can high acid foods, but most people just water bath can them. Some folks prefer dealing with the steam over dealing with a big pot of boiling water, which is why I give both options for this recipe. It is heavy on tomatoes and also has added vinegar, which should keep the pH below 4.6.
I want to share with you my favorite salsa recipe. It has great tomato flavor with the pop of cilantro and just right amount of heat from the serrano chiles. It goes well with chips, carne asada tacos, taquitos, eggs and just about any other dish that you like to add salsa to. You will find a variation of this salsa on tables throughout Mexico. It’s a classic and with good reason.
When I used a combination of Roma/paste tomatoes and everyday garden tomatoes (don’t know the exact variety, but in this batch, Romas probably made up about 1/3 of the total amount of tomatoes), I needed almost six pounds of tomatoes to equal 2 1/2 cups of drained tomatoes. That’s because my non-paste tomatoes have a ton of liquid that drains off. Today, I measured 2 pounds of JUST paste tomatoes (about 12-14 small to medium Romas from my garden) and after taking the skins off, crushing lightly and letting drain, I had a little over 1 cup of drained tomatoes to use for this salsa. I do tend to err on the side of over-draining, as an FYI.

Many websites carry and even specialize in Mexican and Latin American ingredients. If you live in Denmark like me, try out chilihouse.dk for example, they’re a great one stop resource and they’re not even paying me to say that!
I just made my 4th batch of this salsa tonight. We have a huge vegetable garden and have been making it when enough tomatoes ripen. Absolutely love this recipe. I followed it exactly and have made 36 pint size jars. Have given away about half so I will make another 2 batches when the rest of the tomatoes are ready. Everyone loves it. The problem with simply heating up the sealed jars is that during normal processing, the goal is to drive all air out of the headspace (the space between the food and the lid). That’s why you only put the lids on finger tight instead of cranking them on as tight as you can. While boiling, the air is forced out, and then the vacuum formed by lack of air sucks down the lid, making a tight seal. No air trapped in the top of the jar = no opportunity for microorganisms that need air to grow to spoil your salsa. If the pH is low enough, botulism (which releases spores in an anaerobic (no oxygen) environment) will also be out of commission. Used this for my first time canning salsa. So far so good. I did change the spices just a bit because I do not like cumin and I left out the celery (didn’t see that on the ingredient list when I made my shopping list) but added more onion to make up the difference. added 1/4 cup dried red pepper flakes because we like things SPICY!!!! I didn’t have enough for the last pint so I put it in a bowl in the fridge to cool and once it cooled Oh my! The best salsa ever!!!!! I used lime juice instead of vinegar because that is what my mom always did. the spicy with the lime juice and cilantro is just such a good combo! I also generously doubled the cilantro as we can’t get enough of it. How long do you let your jars sit before you open them to eat the salsa?
For a hot salsa, I use 4 jalapenos with the seeds. For a mild salsa, I seed 1-2 of the jalapenos before chopping. Remember that the heat will lessen as the salsa sits, so I tend to error on being spicy than not. However, you can taste while it’s cooking so if you want more, you can always add more. It’s hard to correct spice level so if you don’t like things spicy, then start with only 1 jalapeno and go from there.
I have made this salsa for the last several summers and we love it! This year I have a bunch of extra peaches and I was wondering if you have ever added fruit to this recipe? My understanding from the class I took through the extension service is that it is not a problem to add fruit to a salsa as it is an acidic ingredient. I just wondered if you had ever tried.
Thank you for such a well thought out recipe! I am a beginner and will be attempting your recipe today. I have some overripe tomatoes and just ripe tomatoes that would be perfect for canning. I am thinking of just doing two batches – one that I will refrigerate or eat right away and the other batch will be for canning. I have enough tomatoes to do both and I am devoted to getting them canned and store asap! Anyway – I will let you know how it turns out. You have made me hopeful that I can do it 🙂
