Tomatoes are the most important ingredient. The fresher they are the better your salsa will taste. Look for the ripest ones you can find. Getting a good char on the vegetables is another key to developing the flavor. The lime juice brightens and enhances the flavor. The recipe calls for two serrano peppers but only add one if you want to reduce the heat.
This was too spicy for me (not mild!) and very vinegar-y! I know the acidity is important, but tomatoes seem pretty acidic on their own, right? I’ll stick to my old recipe (which is time tested from my mother in law, but I’m not sure if it’s officially approved by a lab) but I do like your skin slip method. Took longer than 3 min for mine. And the less ripe store-bought Romas didn’t really slip off. Garden ones did, but they weren’t Romas.
Salsa IS its own food group. Or at least it should be and while we’re at that we could decide it counts as one of your five a day, too ;). I eat salsa every day yet sadly can’t find my favourite organic brand [and there actually is only one brand and kind of organic salsa available in anyway] anymore living in the countryside now. The only ones available contain sugar and even though it’s not a ton I don’t like the fact. At least my dippers are vegetables.

What I usually use is the jarred variety, but after trying some homemade Mexican salsa during a family dinner, I was amazed by its fresh taste. My husband has been canning pickles and salsa the last couple years. He uses half water and half apple cider vinegar plus spices to make pickles, put in green bell peppers, onions, table spoon salt. he heat the brine to boiling and puts it in washed heated jars, puts on the lids and rings and they seal. He puts them away in the cupboard after the jars cool. Is this safe to eat without water bath canning or pressure canning? He makes his salsa the same way. he heats it to boiling puts in washed heated jars, puts lids and rings on and if seals considers it okay, stores it in a cupboard. What are your thoughts? He doesn’t listen to me.

Haha! I can totally relate to that. This last Summer I canned up a STORM. It was my first time canning and even though I was excited about all of the jars full of different goodies, I was kind of nervous about actually eating and of it! So, in a streak of paranoia, I had my husband consult a colleague of his who is a pathologist. I figured since he is an expert on germs he ought to know about the safety of eating canned goods. The pathologist said that as long as the lid hasn’t popped it’s completely safe and he wouldn’t hesitate to eat it or feed it to his own kids. That made me feel a whole lot better :) We’ve been enjoying all the jams, relishes, pickles, apple sauce, and salsas since and…we’re still breathing! Go for it, Tori!
I think that garlic will work fine. You can use a water bath canner or a steam bath canner – but you need either one of those to properly seal the jars. Sorry for the incorrect link. Since many of you have asked about a weight measure for the 10 cups of tomatoes, as I’ve been canning the salsa the last few days, I’ve done a little experimenting/research. Basically, I’ve found it varies GREATLY depending on variety. When I used SIX pounds of Roma + every day garden tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use in this recipe was about 2 1/2 cups. When I used TWO pounds of only Roma/paste tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use was a little over one cup. I tend to err on the side of over draining the tomatoes, if anything, so that makes a difference as well. For me, because I usually use paste tomatoes in this recipe, I would plan on around 18-20 pounds (give or take) of Roma/paste tomatoes to get the 10 cups for this recipe…and even more if using tomatoes with a higher water/lower flesh content.
I am on my second batch and I bought 20 lbs. of tomatoes at the Farmers Market to offset my own tomatoes which I did not have enough of…..I left them out on patio for about 4 days……I have been working on this salsa all day…..I actually ended up with 17 cups of tomatoes in the end…….I adjusted the measurements of everything else accordingly and it is turning out great…..my husband loves it…..so do I……I had given away too much though and have to make more…..this time I am making it a little bit hotter……maybe I won’t get asked for more if I make it hotter…..lol Anyway, just wanted to let you know that this is my only salsa recipe that I will make now……excellent!!!!!
