I’ve never attempted to use canned tomatoes in the recipe, and can’t remember the last time I purchased store tomatoes, so I’m not sure how much liquid is in there in proportion to the fruit. My best guess to make this work would be to drain the tomatoes and then weigh them – but this would be a little high since the starting weight with raw tomatoes includes skins, seeds and excess juice that’s removed/drained off. Maybe around 16-80 pounds drained tomatoes? When I’ve drained my tomatoes after chopping, I end up with around 7 quarts in volume. There is no simple answer, unfortunately. If you give it a go, you may way to get pH strips to test the finished salsa and make sure the pH is below 4.6 for safe canning. If not, you could freeze, or add more vinegar.
I love tomato season and this year I made salsa.  Fire roasted salsa that I canned.  I used tomatoes and poblano peppers from the farm stand and roasted them on a hot grill until they were charred and blistered all over.  I love the flavor of grilled tomatoes and peppers.  Then you just peel off the skins, chop chop, add a bunch of good stuff to the pot and you’ve got fire roasted salsa.  It’s perfect for canning to enjoy year round.
Two years ago I was searching for a perfect salsa recipe for canning, but I had the wrong thing in mind.  Instead of thinking of this delicious Mexican salsa that I love, I was thinking of typical jarred salsa.  I looked up some recipes on the internet, ones that people said were popular.  I tried them out. I was very unimpressed.  I should know by now that most of the time…other peoples’ recipes don’t quite work out for me.  Not that there’s anything wrong with them, I just apparently have unique tastes. 🙂
Me? I like to kick things up a notch and use a slur of different chilies for the specific qualities that they provide. Four to be exact: Ancho chili for its depth of flavor and subtle earthy notes, Guajillo for its sweetness and notes of raisins and dried fruit, Chile de Arbol for a bit of a kick and a sprinkle of chipotle powder for added smokiness and a little more heat.

I’m so glad you found this useful in using up your bounty (plus, lucky contractors!). I’m the opposite this year – the tomatoes didn’t like being eaten by the deer and then didn’t like being covered the whole season to protect them. 🙂 I keep looking at my few pounds of paste tomatoes and can’t decide what I want to make with them – this salsa, Addictive Chutney, or the freezer marinara it’s so nice to have on hand. Choices, choices. 😉

I found that cutting your tomatoes in half & putting them face down on a cookie sheet to broil for 4 minutes works great for removing the skins! Also super important to drain your tomatoes after you cut them up! I guesstimated my 13 Cups after I removed skins, cut up and drained. I added a 1/4 tsp more salt, an extra clove of garlic and a couple of extra jalapenos. This is a great recipe! A little watery but consistent with authentic Mexican restaurant salsa! Can’t wait to share w/friends and family!
This salsa traditionally has Chiles de Arbol, tomatoes, garlic, salt and water, but some cooks like to add tomatillos (the medium size tomatoes with a husk), like I do in this recipe. This is a very spicy salsa, but you can adjust the spiciness to fit your own taste by reducing the amount of Arbol peppers. This salsa goes well with “Tacos al Pastor”, too. Most Taquerias in Mexico City that sell Tacos al Pastor offer this salsa to top your tacos with. Some people know this salsa as Salsa de Chile de Arbol and others as Salsa Taquera.
Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. BTW, I can’t find a ‘follow’ button on your site — except pointing to Pinterest, which I know nothing about.

I made several batches of this salsa last year. The very best salsa. Everyone loves this salsa. Planting a lot more tomatoes this year. Plan on making & canning a room full of this salsa. I can’t wait for canning time. The very best salsa ever. Gave so much to friends & family & everyone wants more. I even decorated my jars & gave some for gifts. Love it
Well – I have to share with you this recipe was amazing!  I’m a first time vegetable gardener and was a bit intimidated by the whole canning gig. I guess I had always felt growing veggies and canning are like “peas and carrots” as Forest Gump would say. I read a ton of recipes but yours caught my attention because of the step by step process and super great pics. I followed it to the “T”. My entire family was so happy for me but I have to say thank you to the creator as you made my first canning journey a complete success. I look forward to a bright future in the garnering world 🙂
For canning whole tomatoes, I like those that are firm, but small and round. They hold up better during canning if they are not overripe. Pearly Pink, Stupice, and Glacier are some of my favorites. Assuming that the pH is 4.6 or lower, water bath canning is still the best option for long term storage. I know people have been screwing the lids on hot jars for years. My mom used to do it, and we all lived to tell about it. The thing is, as the years have gone on, the “bad bugs” are getting really bad. How many pathogens do we have out there now that didn’t exist before? The low pH should provide protection – should – BUT water bath processing provides another layer of protection. I figure I already put the time into growing, harvesting and processing – ten extra minutes is not a big deal to help protect my family.

Using an immersion blender or food processor, carefully purée the salsa to a smoother consistency. In a food processor and working in batches, pulse 8 - 10 times and when all finished, return to the pot. Taste for seasonings and if too vinegary, add another tablespoon or so of sugar. If too sweet, add a little more vinegar to balance. Bring blended salsa back to a boil and simmer a few more minutes.

In reality, Mexican food is ANYTHING but simple: It’s fresh corn tortillas baked to order and served either crisp or soft. For a hot salsa, I use 4 jalapenos with the seeds. For a mild salsa, I seed 1-2 of the jalapenos before chopping. Remember that the heat will lessen as the salsa sits, so I tend to error on being spicy than not. However, you can taste while it’s cooking so if you want more, you can always add more. It’s hard to correct spice level so if you don’t like things spicy, then start with only 1 jalapeno and go from there.
This is a great salsa for beginners in Mexican cuisine. There are other salsas that are a little bit more complicated, and which require that you char the tomatoes and other veggies first. This salsa roja recipe, however, just requires that you blend the raw vegetables together, and then cook them with a bit of olive oil before adding onions and cilantro.

Absolutely wonderful! Just finished making IT! I made it with all fresh ingredients and added some extra little skinny cucumbers! For extra flavor a bit of Heinz Ketchup and Sriracha sauce! My husband just left to pick up some bags of Doritos. We can’t always get the “stuff” we so took for granted in Canada. Thanks so much for this incredible recipe….we both appreciate it!
Roast the poblano peppers right on the flames at the top of the stove. When they gets black and the skin blisters, wrap them in a moist kitchen towel to cool, then hold them under running water and peel the skin off. Chop them into fine pieces after seeding and deveining. Add the poblano peppers, as well as the jalapeños and garlic, to the onions and tomatillos/tomatoes.
Was my first time canning  salsa. I don’t like runny salsa this has a perfect consistency!  right amount of spice that has a Kick but it doesn’t linger with you.  Definitely will use this recipe again!  The whole family loves it, even the kids! Thanks for all the tips… they all came in handy and I did the recipe exactly how it was. I got 4 pint  jars and 3 quart size out of a batch.  
Haha! I can totally relate to that. This last Summer I canned up a STORM. It was my first time canning and even though I was excited about all of the jars full of different goodies, I was kind of nervous about actually eating and of it! So, in a streak of paranoia, I had my husband consult a colleague of his who is a pathologist. I figured since he is an expert on germs he ought to know about the safety of eating canned goods. The pathologist said that as long as the lid hasn’t popped it’s completely safe and he wouldn’t hesitate to eat it or feed it to his own kids. That made me feel a whole lot better :) We’ve been enjoying all the jams, relishes, pickles, apple sauce, and salsas since and…we’re still breathing! Go for it, Tori!
Preheat the broiler. Put the quartered tomatoes, sliced onion, and whole garlic cloves onto a roasting tray, spreading out evenly. Drizzle with plenty of olive oil and season well with salt and pepper and sprinkle with cilantro sprigs. Broil until everything is nicely charred, about 10 minutes (you want lots of deep rich color so don't be afraid if some of the edges get pretty black).
Delicious!!!  As far a second knowing how many tomatoes to use, you mentioned somewhere that it was three sheet pans of halved tomatoes.  Using this information, I collected my garden tomatoes on my counter by placing them on my baking sheet.  When I had my baking sheet full plus another half, I knew I had enough tomatoes (or at least that I would be close once I drained them).  Turned out great!!  Even my daughter who can tell handle spicy foods LOVES this salsa!
Chop all of the ingredients. To make things easier, you can use your food processor. I did one batch chopping everything by hand and one roughly chopping using the food processor and they results were really similar. If you want your salsa to have more texture, then I recommend chopping the tomatoes by hand and using the food processor for everything else.
Remove the skins from the tomatoes. To do this, make an “X” in the bottom of the tomatoes, than place in boiling water for 60 seconds. Then, remove the tomatoes from the water and place directly into a bowl if iced water to shock. The skins should slip right off. (I use my spider to transfer the tomatoes from the boiling water to the ice water without getting splashed.)
I made your salsa recipe yesterday. It was really good except too sweet. I have never put sugar in my salsa. Wish I hadn’t done it. I made it very hot, which I love. I use it for cooking as well as eating with chips. I think I will use this for cooking, sweetness won’t effect it. I got 7 pints from a doubled recipe. Also I did not drain tomatoes, because I like it a little juicy. By the way I used broiler for skinning tomatoes. Great idea. I had 150 pear shape tomatoes, not quite as big as Roma’s. Next year I will raise Roma’s. I did 3 trays. All in all great recipe. Thank you.
The best way to peel tomatoes is to get a large pot of water boiling and then place the tomatoes in the boiling water for 30 seconds.  (Some suggest placing them in ice water next, but that isn’t necessary for this recipe)  When you remove the tomatoes from the boiling water their skins will start to split (you may need to assist them by piercing them with the tip of a knife) and they can then be easily peeled.
Salsa Roja – our star of the show tonight! A salsa made from a variety of hot peppers, tomatoes, onions and garlic all of which have been either roasted and/or boiled prior to blending. This makes for a bright red, tasty and superbly versatile salsa that is often served as a condiment at Mexican restaurants but has a million other uses (give or take).
A note on chili varieties: Mexican cuisine uses a wide variety of chilies with different names and characteristics – most of them essential to the final result of the dish they are used in. You should be able to rather easily acquire the chilies described in this (and future) post cheaply online. If you’re having trouble finding these chilies, I suggest you stick to a mix of Ancho (a mild, fruity variety) and Chipotle (a hotter, smoked variety). Both are readily available and this blend will still lend you quite a bit of the complexity.
When I was pregnant with my son, I was completely addicted to Chili’s salsa and chips.  I wanted to eat there ALL the time, and even when I wasn’t eating there I was trying to convince my husband to stop there on his way home to pick up some take out lol.  He was always less than pleased.  I still love their salsa, but since it’s not really cost effective to buy it, or go out to eat all the time, I figured that I would just find a way to make it at home 🙂

Rinse tomatoes and peppers. Core tomatoes and score a small "X" in the blossom end. Place tomatoes and peppers on hot grill and close lid. Turn frequently until peppers are charred and blistered and pretty much black all over. Tomatoes should have some blackened spots and blistered enough to remove the skins. Remove from grill. Place peppers in a bowl and cover with plastic wrap to steam for several minutes. Let tomatoes cool a bit on a cutting board until you can handle.
Hi Cheryl. Thanks for your question. The reason is two-fold. First, you want to salt your veggies to pull some moisture out and help them to stay more crisp after canning. (You’d do something similar if you were pickling cucumbers.) Second, you need a hot liquid to can your salsa in. We hate to throw away the flavorful juice. So, instead of using water or a store-bought can of tomato juice to create the liquid, we just recycle the juices that were already in the tomatoes.
The vinegar in this recipe is required in order to make this recipe safe for canning. You can use white or apple cider vinegar with at least 5% acidity. White vinegar is clear vinegar made by distilling corn and rye. Choose an organic brand to avoid genetically modified corn. Apple cider vinegar is made from fermented apples. If you do not want to use vinegar, consider trying this Garden Fresh Salsa Recipe and freezing it instead.
Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!

On adjusting recipes: I know you want to “make this your own,” but with canning recipes, you can only do so much. It’s important for food safety to have the proper ratio of acidic to non-acidic foods. The tomatoes are acidic, but the peppers, onions, and garlic are not. That’s why you must add the vinegar, and you can’t really mess with the amounts of peppers. You could, however, fiddle with green peppers and colored bells, or sub some of the jalapenos out for a milder pepper if you don’t like it so spicy. Just don’t be too generous with your helpings and overdo the amounts. That’s one thing I love about this recipe – it gives quantities in cups, rather than forcing me to scratch my head and wonder which onion is “small” and which green pepper fits the “medium” category. The only salsa recepie you’ll ever need, so stop looking, this is it!!   It has the perfect blend of everything, I have an abundance of tomatoes this year and I am on my 4th batch, I have followed the recepie exact, except for the last batch I made and that was because I wanted a bit more heat.  Easy to follow recepie, thanks, I hope to see more of your posts,
The key to this recipe is to char the tomatoes and peppers on the stovetop. I tried to do it in the oven once and roast the tomatoes & peppers, bad move. It will take you about 20 minutes, but sooooooo worth the wait. You’ll need to rotate the veggies from time to time, so all the sides are pretty even. Here is what the vegetables will look like once they are done:
IMPORTANT: Follow the directions carefully and exactly for each recipe. Use the amounts of each vegetable listed in the recipe. Add the amount of vinegar or lemon juice listed. You may decrease the amount of spices if desired. Do not can salsas that do not follow these or other research-tested recipes. These salsas may be frozen or stored in the refrigerator. Do not thicken salsas with flour or cornstarch before canning. After you open a jar to use, you may pour off some of the liquid or thicken with cornstarch.
I just finish making 18 pints of salsa, using this recipe with some modifications! I added 2 cups of finely dice red and green bell peppers, increased the vinegar to 3/4 cup and came out with a pH of 4.1. I let it set for about 30 minutes after mixing to mix the flavors and then I brought to a boil and only simmered for about 5 minutes, as I like less soggy salsa!

I too tried this recipe and it was way too watery. I ended up cooking the salsa for another 20 minutes (total of 60 minutes simmering) and after it was cooled I ran it through the blender as the skins were still in the salsa and just kind of stringy. When I make salsa again I will likely cube or dice the tomatoes first and only add 1 cup of water at most.

Absolutely love this. You were right. Getting as much water out is so really important step. I drained as best I could with colanders then put in glass bowl. More liquid settled so I used a turkey baster to remove more liquid. Won’t ever make it another way. I have been looking for a salsa that has body and flavor and this is outstanding. I made my own tomato sauce as the tomatoes I got from local farmer were meaty and very flavorful. Thank you for posting this outstanding salsa recipe.
